Shepherd’s Pie

We’ve had some strange winter weather so far this season.  We seem to be on an endless roller coaster, racing between freezing temperatures and sunny summer-like skies.  I’m really to the point now where I just want Mother Nature to pick a season and go with it.  My wardrobe is greatly confused.

The other day, it was downright dismal outside.  The skies were a creepy, murky gray, the wind was something out of  “The Wizard of Oz”, and the bitter cold rain was coming down in sheets.  Not exactly the winter wonderland we like to picture this time of year.  I knew that whatever I made for dinner that night, it needed to warm me up, heart and soul.  Some days just call out for comfort food and this was one of them.

Crunchy Buttermilk Baked Chicken

I’ve cooked up a lot of different things in my little kitchen, but one recipe I’ve never attempted is fried chicken.  It scares me!  Besides the obvious calorie count and fear of starting a massive kitchen fire, I’m really most afraid that I’ll screw it up.  There are plenty of fried chicken places here in the South and I let them do the frying.

Due to my fear of the fryer, fire, and fat, I’ve tried more oven baked “fried” chicken recipes than I can count.  I’ve made a lot of them…one time each.  I’ve never run across one that my family loved.  They are always just OK.

Maryland Crab Roll Ups

The countdown to Christmas and New Year’s is on!  How is 2011 almost over already?  I remember my dad telling me when I was younger that the older I got, the faster time would move.  Today, my “baby” turned nine!  Tomorrow is my 30-somethingth birthday and, while I don’t consider myself “old”, I already feel like time is flying by.  I’m a little scared of what’s to come!  How can time possibly move any faster?

Baked Greek Olives

There’s a running joke in the movie “Mermaids” about how Cher’s character, a busy, half crazed mother of two girls (Hmmm…that sounds familiar), only feeds her girls appetizers for dinner.  The only cookbook she’s ever opened  is called Fun Finger Food.  As a teenager, I thought that was hilarious.  Who would do that?  As an adult, I totally appreciate it.  I love when I’m at a party or get together and there’s just a spread of appetizers to munch on!  I think this is one reason why I love holiday parties and open houses so much.  Munchies are often the main course!

Raspberry and Cream Cheese Coffee Cake

I really should take a minute and apologize to this recipe.  This is one that I’ve run across at least a kazillion times while looking through one of my favorite, and oldest, baking books.  Every time I’d see it, I’d think about how I really needed to try it out sometime, and then I turned the page.   I ignored it for years!   After at least a decade of passing it by, I finally stopped procrastinating and made the thing!  I’m glad I did.  I baked it up for a brunch I attended earlier in the week.  It was so easy to make, though, that I won’t need a special occasion before I whip it up again.

Tortilla Soup

I’m just going to come out and say it. I won’t mince words.

I love this soup.

  It may be my favorite soup to make during the chilly months.  I always look forward to the first batch and, as usual, this year’s did not disappoint!

Every time I make this soup for someone, they ask me for the recipe.  It’s so easy, it’s almost embarrassing.  There’s nothing gourmet about it, preparation-wise, but it is the best Tortilla Soup I’ve ever had.  It’s great to either entertain with or have on a busy weeknight.  It can be a little spicy, though, and if you’re not into the heat, there are a few ways to mellow it out.

It’s finally here!  If you follow me on Twitter (@chewnibblenosh) or take a peek at my Facebook page every once in a while, you may have heard me mention how excited I was to be a part of the first annual Great Food Blogger Cookie Swap.  Thanks to our hosts, Lindsay from Love and Olive Oil and Julie of The Little Kitchen, myself and over 600 food bloggers from across the country (and Canada!) participated in a cookie swap of massive proportions over the past couple of weeks.  Each participant baked a batch of cookies and then sent a dozen to three other participants, Secret Santa style.

Crock Pot Barbecue

Congratulations!  The first full week of December is almost in the books!  The upcoming weeks are only going to get crazier, if your house is anything like mine, so here’s an easy recipe to throw in the Crock Pot on a busy day.

I wish I had a bunch of beautiful photos to share with you, but I don’t.  That is a testament to how easy this recipe is, though!  Just a couple of photos means not many steps (or…none of the photos turned out. But, in this case, it’s the “not many steps” thing).

Cream Puff Cake

Food, in general, is pretty amazing stuff when you think about it.  Not only does it sustain us, comfort us and keep us going day after day, but certain foods can trigger memories and take us back to places we haven’t seen or visited in years in just a single bite.
