French Almond Cake with Berries and Cream

Right now, the farmers markets and roadside stands are brushing off their winter dust and settling in to offer us the best of the summer produce.  I love all of the beautiful fruits and veggies that summer has to offer, and one of the best parts of summer, for me, is when berry season is in full effect.  We haven’t made our annual trip to the strawberry patch yet, but when we do, I’ll be up to my ears in amazingly sweet, delicious berries.  I can’t wait!

Greek Meatballs with Lemon Couscous

We’re back!  Disney World was a ton of fun, and now I’m in clean-up mode.   Unpacking from a trip may top my list of undesirable activities.  I spent the morning tackling the pile we unloaded from the car.  It really didn’t seem like we took THAT much stuff, but I guess we did. The last batch of clothes are in the washer, and I think I’ve managed to unpack all of the little, random bags we came home with.  So, now…I can finally get back to the blog!

Fruity Kool-Aid Candied Popcorn

Today is THE day!

It’s the last day of school!

The last day of school is always so bittersweet for me.  While I’m excited about the fun and sun of summer break, it means that in the blink of an eye, my girls have passed another milestone.  Emily will be a 4th grader in August when she heads back to school.  Fourth graders are the big kids at school!  I’m not ready for that!  And my baby, Avery, is done with Kindergarten!  How does this happen???  When I was a kid, the school year dragged on and on, and summer always seemed like it was a lifetime away.  Now that I’m the grown-up, time moves so quickly, I can’t keep up.  My dad warned me that this would happen.  I should have listened.

Tuscan “Baked” Beans

It’s beginning to look a lot like cookout season!  I love sunny weekends where we can get together with family and friends, enjoy each other’s company while the kids play outside, and enjoy a great meal together.  There’s nothing better.

Three Cheese Artichoke Bites

It’s always nice to have a few recipes in your back pocket when you’re asked to bring a dish to share.  It’s even better when the dish is something a little out of the norm, so there won’t be twenty of them on the pot luck table.

This is one of those recipes.  These little savory artichoke bites are really easy to put together and they bake up beautifully.  I would compare them to a really hearty little crustless Quiche.  They are really tasty, and even better, super simple to whip up for a crowd.

Quick Asian Steak Kebabs with Broccoli Slaw

It’s Friday!  YAY!!!!!!

Boy, has this been a week!

After today, we only have one more week of school down here.  As anyone with kids in school knows, the last couple of weeks are CRAZY!  I’ve been so busy that my Moment of Zen this week was being able to sit down for a couple of hours while my car was being serviced at the dealership.  Kind of pathetic, eh?

Thankfully, we were all able to settle in together for dinner last night. I was short on time, but tried out this new recipe because it promised dinner in a flash.  It really was quick and easy, plus the fact that it tasted so good didn’t hurt either!

Dried Cherry and Pistachio Biscotti

Those of you who have known me for a while probably know that I’m a bit of a coffee addict.  Well, it’s not really an out-of-control addiction, but I do have a fancy-schmancy coffee problem.  I have one or two cups of regular drip coffee in the morning like most people and on many days, that’s enough.  However, there are other days when the drive-thru at Starbucks calls my name and I just have to get something that involves espresso, and foam, and maybe caramel, or cute little sprinkles.

Baked Parmesan Fish Sticks

I think it’s pretty safe to say that for many parents, getting your child to try new foods (and to like them) can be pretty painful.  As you know, I’m constantly trying out new recipes, and my kids are used to that, but that doesn’t mean that dinnertime every night is a breeze.  Most nights include some whining, whimpering and even the occasional, “I’m so hungry, but there’s just nothing to eat.”  That last statement is usually heard when we have fish for dinner.  My girls have gotten to the point where they like salmon, and one of them likes shrimp, but if I make any other kind of seafood dish, they cringe.

Happy 100th Post! A Few of my Favorite (Kitchen) Things AND a Giveaway!

It’s a special day around here!  It’s a bit of a milestone, actually.  Today marks the 100th post on Chew Nibble Nosh!  In honor of today, I figured I’d try something different.  Instead of a recipe, I’m going to talk today about ten of my favorite kitchen gadgets that help make life, and cooking dinner, a whole lot easier.  A couple of them are bigger ticket items (We’re not talking Oprah’s Favorite Things big-ticket type items.  Don’t worry.), but most of them are perfectly simple, affordable items that just come in handy.

Then, after the top ten is revealed, I’ll announce a new giveaway!  So, keep reading!

Asparagus and Gruyere Tart

I’m sure you’ve been just dying to know what I used the rest of that gigantic bag of asparagus for ever since I wrote about it last week.  No?  Well…hmmm.  I guess that’s just too bad, because I have a great recipe to share with you today because of that giant bag of asparagus!

You may not have known this, but May is actually National Asparagus Month! There’s no better time to inundate the blog with asparagus filled recipes then, right?
