Roasted Green Beans with Lemon, Garlic, and Parmesan

I’ve made no bones in the past about my love of roasted vegetables.  I’ve roasted cauliflower for you, brussels sprouts, edamame and corn, potatoes, and even kale.  My obsession with roasted vegetables may border on annoying, and I’m sorry, but I really feel the need to share yet another one with you.  Please bear with me.

Oh my goodness.

I never, ever thought of roasting green beans before I saw this recipe.  I don’t know why it never crossed my mind, given my obsession, but I’d never tried it before.

Chocolate Malted Whopper Drops

Rainy days just lend themselves to baking.  I can have all the get-up-and-go in the world, but if I’m greeted by a gross, rainy day I usually put that pep to good use in the kitchen.  Yesterday was a gloomy, icky day.  Gray skies, constant drizzle or downpour, frizzy hair…it was ugly.  It was the perfect day for chocolate cookies.

I’ve wanted to bake these up for a while, and I’m glad I finally got around to it.  They are one of a kazillion delicious looking recipes from Dorie Greenspan’s beautiful book, Baking: From My Home To Yours.  

Broiled Caesar and Parmesan Flounder

Ready for a quick, delicious meal?  This one is pretty fast, so pay attention, or you might miss it.  In less than 15 minutes, you can have this dinner ready to go and on the table.  We enjoyed it on a busy weeknight, but it would be a great meal to entertain with, so you could spend less time in the kitchen and more time with the people you’re entertaining!

First, take 8 skinless flounder fillets and season them with salt and pepper on both sides.  Roll them up, starting at the smaller end, and place them on a broiler pan.

Slow Cooker BBQ Beef Chili

Well, it took a couple of weeks, but now our nights are busy again.  After school activities have kicked off this week.  We’re exhausted and very thankful it’s Friday. I don’t know how some families do it.  We are only busy a couple of nights a week and it throws us for a loop.  All of you out there with something going every night amaze me!

Recipe Double Whammy! Cream of Anything Soup Substitute & Cheesy Chicken and Broccoli Quinoa Casserole

We are a casserole lovin’ country, aren’t we?  I don’t make casseroles often, but every once in a while, I really just want something warm and comforting for dinner, even in the summer.  If I’m being completely honest, one of the main reasons I don’t make a lot of casseroles is because canned condensed “Cream of ___” soups give me the heebie jeebies, and it seems like they always pop up in a casserole recipe.  I know, that’s not normal, but it’s the truth.  There’s something about dumping out a cold can of gelatinous, slimy goo, with little chunks of “meat” in it that just creeps me out.

The Preserved Lemon Project, Step One: Preserving the Lemons

Today, I’m going to try something a little bit different.  Bear with me.  If this isn’t your thing, I won’t be offended if you skip out right after this next paragraph, but I’d think you were really awesome if you hung in just a little longer.

A while back, I was treated to an amazing Moroccan dish called a Tajine.  There are lots of different Tajines out there, but they basically all include a braised, slow cooked meat (chicken, beef, lamb), stewed with both sweet fruits and savory spices.  There’s a ton of flavor going on in there.  I’ve never had anything like it.  The Moroccan meal I was lucky enough to eat was incredible.  I remember chicken, olives, raisins, almonds, some spicy kick, an amazing stewed sauce, and beautifully slivered lemons.  Those lemons are what we’re going to talk about today.

Sunday was Avery’s 6th birthday.  How did we get to six so quickly?  My baby isn’t a baby anymore.  In fact, just yesterday she was telling me that someone at school mistook her for a Kindergartener and she was highly offended.  *sigh*  It just happens too fast, and I don’t know what it is about the second child, but it seems to happen a lot faster since she came along.

Saturday was a miserably rainy day here.  We all woke up early, excited about that morning’s visit to our local Farmers Market and I noticed that the sky looked kind of gross.  I checked the weather, and saw what nobody heading to an outdoor market wants to see…the dreaded giant blob of red on the radar screen.

We decided to wait a bit before we left, and it’s a good thing we did because it soon started pouring.  Not just heavy rain, but that crazy, torrential, “makes the trees bend” stuff.  And it kept raining for most of the day.  I think the sun finally peeked through around 7 o’clock that night, just before it headed to bed.
