Slow Cooker Tortellini and Sausage Soup

Slow Cooker Tortellini and Sausage Soup

Continuing with this week’s theme of “I Just Don’t Have Enough Time in the Day, so Let’s Make Something Easy”, I offer you this crazy good, super simple Crock Pot meal.  It’s another Pinterest find, and the original recipe is over at the blog Little Fellows.  I’ve tweaked the recipe just a bit, but didn’t touch how simple it is.  My family loved it, and I hope yours does too.

I started by browning up a pound of Italian turkey sausage.  You could use whatever sausage sounds good to you.  I went with turkey to try and lighten things up a bit.

As the turkey was browning, I got together the rest of my ingredients.

Once the turkey sausage was browned, I drained it and added it to my slow cooker, along with all of the other ingredients.

I gave it a good stir, set the cooker to LOW, and let it cook for about five hours.

I stirred it a couple of times during the cooking process, but other than that, it was hands off.  When it was time for dinner, I had a huge pot of delicious, hearty soup in front of me.

I served it up with some crusty bread and a salad, and we were good to go!

How’s that for easy?

  1. Wow!! This looks so amazing I’m practically licking the screen!
Too bad my better half doesn’t like any sort of pasta…or soup :(
I might have to try it some time though :)

  3. Tried this recipe yesterday with one change. The recipe calls for a 19 oz. bag of tortellini. I found only 16 oz. bags, so I used two bags in the recipe. It was very thick as the pasta sucked up the liquid… but it sure was good!!! When I try it again, I’ll add a third can of broth.

  4. This is one of the best soups I have ever made…..according to my family with this recipe we should start up an eat street soup truck

    • Sounds like a great plan! :) My husband used to joke that he liked my chicken salad so much that I needed to open up a restaurant called “Christine’s House of Mayonnaise Based Salads”. Maybe I should move it into a truck and we could partner up!

  5. You could also skip the browning step by buying the precooked sausage crumbles in the bags by the bacon. That would make it super easy and it’s actually pretty good! Thanks for the recipe, I can’t wait to try it!
