Double Chocolate Peppermint Crunch Cookies – The Great Food Blogger Cookie Swap 2015

Double Chocolate Peppermint Crunch Cookies - Chew Nibble Nosh 7

It’s that time of year again!  It’s time to announce this year’s contribution to The Great Food Blogger Cookie Swap!  This is my fifth year participating in this fabulous event, hosted by Julie at The Little Kitchen and Lindsay from Love & Olive Oil. My job?  Bake up a fantastically new cookie recipe and ship out boxes of treats to three hungry food bloggers, Secret Santa style.  These delectable little cocoa-peppermint gems are what made the cut this year.  Dark, and fudgy, but with a peppermint zing that seems just about perfect this time of year, I couldn’t wait to send them out to this year’s recipients, Ginger from Stark Raving Delicious, Kellie from The Suburban Soapbox, and Annie from Annie One Can Cook.  Based on the response I got, I think they really enjoyed them!  Hope you do too.

Sour Cream Cranberry-Almond Pound Cake: Mix Up the Holiday with OXO On

Sour Cream Cranberry Almond Pound Cake - Chew Nibble Nosh

A few weeks ago, I was using my hand mixer while baking up something in the kitchen, and I mentioned to my husband that it seemed that the mixer I’d received as a wedding gift, nineteen years ago, was finally reaching the age of retirement.  It just didn’t have much get-up-and-go anymore, and it sounded pretty pitiful.  It was kind of sad, and bittersweet…mainly because I’m realizing that I’m old enough to send reliable appliances into retirement.  Not too long after the old mixer was put out to pasture, I heard from my friends at OXO, and they asked if I’d like to try out their new OXO On Illuminating Digital Hand Mixer! Do they have perfect timing, or what?

Stuffed Caramel Apple Cupcakes

I know, I know.  Thanksgiving is on Thursday and this isn’t a recipe for pie.  I hope you’ll forgive my holiday faux pas once we get going.  In all honesty, I made these amazing little gems for a Halloween party, and I’ve had so many requests for the recipe, that I thought I’d present them to you as a possible addition to your Thanksgiving dessert table.  They are deliciously sweet, sticky, and gooey, just the way a caramel apple should be. And, even though they aren’t pie, you’ll find they’re perfect for any fall celebration.  It’s not often that adults go nuts over cupcakes, but that was certainly the case when I made these the first time.

Pumpkin Spice Monkey Bread

Go big or go home seems to be the motto when it comes to over-doing pumpkin spice  nowadays.  It started out seasoning things as simple as a latte and some cookies, and has branched out into household cleaners and bottled water (I’m sorry, but ick.)  It’s a little ridiculous.  That said, pumpkin spice placed in just the right recipe is still a very good thing, and I was excited to try this version of one of our favorite family breakfast treats, ooey, gooey sticky Monkey Bread.

Oatmeal Coconut Raspberry Bars

A couple of weeks ago, I got to cross off something on my bucket list.  My dear friend Kristin told us earlier in the summer that she had two extra tickets to see Harry Connick Jr. at The Ravinia Festival in Chicago, and she asked if we’d like to join her and her husband.  You may be thinking that seeing Harry live would be the bucket list item.  Nope.  I’ve seen Harry perform a few other times, and he’s wonderful, he really is. If you ever have the chance to see him, go.  He’s ridiculously talented, funny, and charming.  Every show of his is different, and he is so personable he can make a large venue seem like a small, intimate jazz club.  I had the opportunity to meet him when we lived in New Orleans, and he is refreshingly genuine.  I could go on and on about how much I love Harry…and I think I have.

Rich and Fudgy Zucchini Brownies

Rich and Fudgy Zucchini Brownies - Chew Nibble Nosh

When I was young, my mother had this wonderful little garden on the side of our house.  I used to love watching the garden grow each summer, and daily trips out to pick fresh tomatoes, snap peas and zucchini were a highlight.  I remember spending my summer days outside, playing with friends, and we’d snack on sugar snap peas, fresh from the garden, as we played. The zucchini always fascinated me, though, because there were some years when nothing would grow, and others when we’d end up with zucchini as long as our arms, that seemed to weigh as much as a small child.  My mom would make zucchini bread after zucchini bread after zucchini bread, and we’d laugh at the size of our ginormous zucchini.  They were like veggie snacks for giants.

Tres Leches Cake with Berries

Tres Leches Cake with Berries - Chew Nibble Nosh

Tres Leches Cake is one of those recipes that I feel has been haunting me for a while.  I’d never made it before this, but I kept seeing it…everywhere.  The idea intrigued me, a simple vanilla cake soaked in a creamy concoction of Tres Leches (Three milks, if I remember correctly from high school Spanish).  It seemed more like a pudding than a cake, but more cake-like than a bread pudding.  I wanted to make one, but none of the recipes jumped out at me.

Orange Glazed Bunny Buns

Seriously, aren’t these little guys just too cute?

They are the perfect addition to your Easter table, be it brunch or dinner.  They are deliciously tender, and flavored with just a hint of warm spices and orange zest, and then glazed with a simple, sweet orange glaze to finish them off.

And…they are super cute.

They really aren’t difficult to put together, but as with any yeast bread, they do take a little bit of time.

I started by mixing together some flour, yeast, and allspice in my mixing bowl.

Looking for something sweet for your sweetheart this Valentine’s Day?  These brownies are not only beautifully festive, but they are also unbelievably tasty.

I have this amazing neighbor.  She’s a wonderful friend, wonderful mom, and also a wonderful baker.  She bakes up the most delicious treats, and we’ve managed to be lucky enough to be her guinea pigs on more than one occasion.  A couple of weeks ago, she texted me asking if it was OK to send down some Red Velvet Cheesecake Brownies to try.  (Did she really need to ask?  Heck yes!  Send them down!) She wanted to know if they were good enough to send in for the teachers.  We were her taste testers.  Tough job, eh?
