Christmas morning is magical, and breakfast on Christmas should be equally as special. I usually try to do something a little out of the norm for Christmas morning, but I’ve had years when it seems that I’ve spent most of the early hours of the day in the kitchen cooking, instead of enjoying the morning with my family. It’s always nice when breakfast can be made up the night before, and just popped in the oven, like with the Overnight Blueberry Stuffed French Toast that I posted last year.

Spiced Cranberry Slow Cooker Oatmeal AND The NatureBox Giveaway Announcement!
If you added up all of the snacks you eat in a month, how much of it was healthy? How much did you spend on those snacks? How many of those snacks left you feeling satisfied and happy with your decision?
If you’re like me, you eat at least one snack a day, or are sometimes in such a hurry that grabbing a handful of something constitutes breakfast or lunch. It’s not the best way to go about things, but it’s the truth. Some days, I just don’t have time to sit down for a full meal before dinner, so I have a couple of snacks throughout the day instead. I’m always on the lookout for healthy snacks. Snacks that fill me up, silence the grumble in my stomach, and don’t leave me with that “Oh my gosh, I can’t believe I wasted the calories on that candy bar, and now I’m starving” guilt.
Gooey Overnight Cinnamon Rolls
Sunday was Avery’s 6th birthday. How did we get to six so quickly? My baby isn’t a baby anymore. In fact, just yesterday she was telling me that someone at school mistook her for a Kindergartener and she was highly offended. *sigh* It just happens too fast, and I don’t know what it is about the second child, but it seems to happen a lot faster since she came along.
Blueberry Crumb Muffins
When life hands you blueberries, make muffins. Isn’t that how the old saying goes? It isn’t? Well, it should.
Some mornings just call for muffins, and this was one of those mornings. I had a pint of beautiful berries in my fridge that was staring at me every time I opened the door. Usually, I throw some berries on my yogurt in the morning and call it a day, but this morning I didn’t want yogurt. I wanted a buttery, crumb topped muffin bursting with fresh berries.
So, I made some.
Quick and Easy Egg Tarts
I’ve mentioned before that we are big fans of breakfast for dinner at our house. When we do have “Binner”, as my daughter calls it, it’s usually something pretty kid friendly…pancakes, waffles, eggs and bacon. That’s one of the nice things about Binner. Nobody complains! I decided to try this egg tart out the other night on the family, and fully expected the kids to turn their noses up at it. You know what? They didn’t! They loved it. Both of them. I’m still amazed.
Dried Cherry and Pistachio Biscotti
Those of you who have known me for a while probably know that I’m a bit of a coffee addict. Well, it’s not really an out-of-control addiction, but I do have a fancy-schmancy coffee problem. I have one or two cups of regular drip coffee in the morning like most people and on many days, that’s enough. However, there are other days when the drive-thru at Starbucks calls my name and I just have to get something that involves espresso, and foam, and maybe caramel, or cute little sprinkles.

Is there anyone out there who doesn’t enjoy breakfast for dinner? We try to have breakfast for dinner at least a couple of times a month, and nothing seems to excite my kids more. Even though they can be picky at other meals, they are always solid breakfast eaters. If I can double up on breakfasts during the day, I know they are being well fed!
One of our favorite breakfast-dinners are these quick and easy toasted sandwiches. I love them because they are quick and simple, plus they can be made up earlier in the day and then just baked up at dinner time. The girls love them because, well…they are really good.
Easy Berry-Cheese Danish
It’s Monday, but not our usual Monday. Everyone is home from school/work on holiday and we had a slower morning than usual. It had been a busy, busy weekend, so we enjoyed taking it a little easier this morning. Since we were all home, and enjoying the laziness of it all, I decided to bake up some goodies for breakfast.
