I have this amazing neighbor. She’s a wonderful friend, wonderful mom, and also a wonderful baker. She bakes up the most delicious treats, and we’ve managed to be lucky enough to be her guinea pigs on more than one occasion. A couple of weeks ago, she texted me asking if it was OK to send down some Red Velvet Cheesecake Brownies to try. (Did she really need to ask? Heck yes! Send them down!) Chocolate and marshmallow is one of my favorite combinations, but I fully underestimated how delicious these cookies would be. I saw them on Pinterest, thought they were clever and fun, and then I took a bite, and fell in love.
These cookies are fudgy, and chewy, rich, and delicious. Warm, out of the oven, they are melty and gooey, like a molten lava cake. As we ate them over the next few days, they were still chewy, and decadent…and the marshmallow stays puffy and light. That was, honestly, my biggest worry. It’s May, and May in Indianapolis means race season! We Hoosiers are prepping for “The Greatest Spectacle in Racing”, otherwise known as The Indianapolis 500. Every year, hundreds of thousands of race fans make their pilgrimage to the track during the month of May, and this year, the party kicks off early.
On Friday, May 9th, the Rev Indy event will be held at the Indianapolis Motor Speedway, celebrating not only the amazing drivers and the sport of racing itself, but the fabulous food and music that the great city of Indianapolis has to offer. It will be a wonderful night, all for a wonderful cause, as it will raise funds to help support the Indiana University Health Statewide trauma programs. Last week, we were so excited that my cousin, Jessica, was able to come and visit us for a few days! Jessica is a superstar HR manager by day, and by night she loves to cook and share her recipes on her own food blog, Sassy Southern Yankee. She had a conference she needed to attend that was practically in our backyard, so we served as home base during the week. Prior to Jess’ visit, I made sure to ask her if she had any food allergies or food dislikes so I could make sure to plan appropriately. This was my state of mind yesterday afternoon, when I decided to whip up these tasty little guys.
I’d made plenty of chocolate-oatmeal bar variations before, in fact, I wrote about a delicious no-bake version here a while back. This one wasn’t much more difficult than the quick no bake version, and the result was totally worth the extra time in the oven. These are buttery, and fudgy, and speckled with sweet butterscotch chips. Oh, and there’s oatmeal in there, so they are TOTALLY healthy. I have to admit that I was intrigued by these cookies, but wasn’t sure how into them I would be. I don’t like maraschino cherries.
