What do we do when we buy a bunch of raspberries because they’re on sale? We make pie! I’ve had this recipe in my back pocket for a while now, and have been meaning to make it, but grabbing some beautiful berries at a beautiful price sealed the deal. And, the fact that this pie is so easy to throw together made it taste even sweeter.

That’s all is takes to make this incredibly fun, crispy, crunchy, chocolatey, cool dessert. This ice cream cake is so easy to put together, and it knocked the socks off of my family at a cookout over the weekend. Ah, Labor Day weekend…summer’s last hurrah. A time to gather together, slap on some sunscreen, hang out at the pool one last time, and have a cookout. In honor of that last hurrah cookout, I’ve put together a list of some of my favorite summer recipes from past posts to ease your menu planning along. And, now that I’ve had a good look at some of these again, they may be making an appearance at my own house this weekend. Bonus!
A couple of weeks ago, I got to cross off something on my bucket list. My dear friend Kristin told us earlier in the summer that she had two extra tickets to see Harry Connick Jr. at The Ravinia Festival in Chicago, and she asked if we’d like to join her and her husband. You may be thinking that seeing Harry live would be the bucket list item. Nope. I’ve seen Harry perform a few other times, and he’s wonderful, he really is. If you ever have the chance to see him, go. He’s ridiculously talented, funny, and charming. Every show of his is different, and he is so personable he can make a large venue seem like a small, intimate jazz club. I had the opportunity to meet him when we lived in New Orleans, and he is refreshingly genuine. I could go on and on about how much I love Harry…and I think I have. When I was young, my mother had this wonderful little garden on the side of our house. I used to love watching the garden grow each summer, and daily trips out to pick fresh tomatoes, snap peas and zucchini were a highlight. I remember spending my summer days outside, playing with friends, and we’d snack on sugar snap peas, fresh from the garden, as we played. The zucchini always fascinated me, though, because there were some years when nothing would grow, and others when we’d end up with zucchini as long as our arms, that seemed to weigh as much as a small child. My mom would make zucchini bread after zucchini bread after zucchini bread, and we’d laugh at the size of our ginormous zucchini. They were like veggie snacks for giants. It’s that time of year again! Berry season! My fridge is consistently stocked with fresh berries this time of year. So, when The Daily Meal asked me if I’d like to enter their Driscoll’s Berries #RaspberryDessert recipe contest, I figured there couldn’t be a better time! Tres Leches Cake is one of those recipes that I feel has been haunting me for a while. I’d never made it before this, but I kept seeing it…everywhere. The idea intrigued me, a simple vanilla cake soaked in a creamy concoction of Tres Leches (Three milks, if I remember correctly from high school Spanish). I have this amazing neighbor. She’s a wonderful friend, wonderful mom, and also a wonderful baker. She bakes up the most delicious treats, and we’ve managed to be lucky enough to be her guinea pigs on more than one occasion. A couple of weeks ago, she texted me asking if it was OK to send down some Red Velvet Cheesecake Brownies to try. (Did she really need to ask? Heck yes! Send them down!)
