Ah, Labor Day weekend…summer’s last hurrah. A time to gather together, slap on some sunscreen, hang out at the pool one last time, and have a cookout. In honor of that last hurrah cookout, I’ve put together a list of some of my favorite summer recipes from past posts to ease your menu planning along. And, now that I’ve had a good look at some of these again, they may be making an appearance at my own house this weekend. Bonus!
I can’t begin to tell you how an Egg will change the way you grill. We’ve had one for the past couple of years, and trust me when I say that it does some pretty spectacular things for grilled food. It’s rare that I make kebabs, and I honestly don’t know why. Talk about an easy weeknight meal! Or, they’re perfect for entertaining. Plus, with the meat and veggies taken care of, it’s almost an entire meal on a stick. Everyone loves food on a stick! Why don’t I do this more often??

Well, after a perfectly beautiful and mild month of June, and first bit of July, summer really decided to kick things into gear this week. The past few days have been hot! Not pleasant hot, either, but that sticky, thick hot that smacks you in the face as soon as you step out the door and knocks the oomph right out of you.

This salad may go down in history as the prettiest salad I’ve ever made. Even better? It was delicious. If you’re heading to a 4th of July party and have been asked to bring a dish, this is the perfect thing! The ingredients all need to hang out in the bowl and marinate for a while before diving in, so you can put it together at home, hang out with your friends for a bit and then, just have the salad whenever you want. Father’s Day is coming up this weekend, so I thought I’d share one of our favorite new dinners that the dad in our house is especially fond of. When we lived in New Orleans, one of my favorite local dishes to order was jambalaya. I’ve had some good jambalayas, some pretty bad jambalayas and some rock star jambalayas. It’s not that it’s a difficult thing to make, it just seems that every place has its own little version of it, some better than others. I guess that since I’d only had a few versions of it that truly knocked my socks off, I’ve been hesitant to make it myself. After today, we only have one more week of school down here. As anyone with kids in school knows, the last couple of weeks are CRAZY! I’ve been so busy that my Moment of Zen this week was being able to sit down for a couple of hours while my car was being serviced at the dealership. Kind of pathetic, eh?
Thankfully, we were all able to settle in together for dinner last night. I was short on time, but tried out this new recipe because it promised dinner in a flash.
