Outdoor concerts are one of my favorite ways to spend an evening in the summer. We’re very lucky to be surrounded by many different opportunities for musical evenings where we live, and we were excited when some friends of ours asked if we’d like to join them for a night with the Indianapolis Symphony Orchestra under the stars last week.
Just a few short days ago, the weather was brutally hot around these parts, as it was in most of the country. So, trying to figure out what to bring for our symphony picnic proved tricky. If you were to ask me what my all time favorite pasta sauce is, I would answer, without hesitation, that it is THIS Bolognese sauce. I posted that recipe a few years ago, and things haven’t changed. It’s still my all time favorite.
That said, it’s a time-consuming sauce. One that’s meant for a day when I have time to spend in the kitchen. On days when I don’t have time to spend in the kitchen, this lightened up, chicken-based Bolognese sauce is a fantastic alternative. It came together in minutes, and my family devoured it in just a few as well. It’s fresh and light, and great for a night when you’re craving comfort food, but not so much craving the work involved. Well, this worked out nicely. I received my latest issue of Food Network Magazine
in the mail last week, and I opened it right up to this recipe. I made it, loved it, and now you get to have it. Let’s hear it for efficiency!
My family loved this simple take on traditional Chicken Parmesan. This is a one skillet dish, and with the added artichokes and chunky breadcrumbs, there’s really no need for pasta. Every year at Saint Patrick’s Day, like a lot of you, I make corned beef and cabbage. It’s a dinner we all really enjoy, and despite all of us enjoying it, I find myself only making it once a year. I’m not exactly sure why, but that’s usually how it goes. And my family gets pretty excited when that once-a-year day rolls around! I’ve been making it for years, once a year, and after trying numerous variations on the old stand-by, I’ve decided that this version is my favorite…and the rest of my family agrees. So, you know my picky eater, Avery? Well, Avery has recently developed an obsession with competition cooking shows. Her favorite being Worst Cooks in America on Food Network. (If you haven’t watched it, you should check it out. It’s really kind of fantastic.) The whole premise of the show is celebrity chefs coach horrible cooks from around the country, and turn them into REAL, honest to goodness chefs. It’s a pretty incredible transformation, and actually a pretty funny ride along the way. One, of many reasons, why a lot of the people involved in the show don’t know how to cook, is because they are honestly afraid of trying new things. (Sound familiar?) I am in love with the new store in town.
If you live in the Indianapolis area, you’ve probably heard the buzz about the new Market District store that has opened up in Carmel at 11505 N. Illinois Street. It’s really spectacular and, if I’m being completely honest, I’m a bit of an addict. It’s only a few minutes from our house and I find myself there a lot lately. (In fact, I’ve been there twice since Sunday.) I was lucky enough be able to attend media events and tours on opening day, and with the behind-the-scenes knowledge I gained, I assure you that it really is a special place, full of amazing people who honestly, truly love their jobs. I’m tough to please when it comes to Italian food. My dad’s side of the family is Italian, so I was lucky to grow up in a kitchen where tomatoes, basil, and garlic were a way of life. I often find that Italian restaurants don’t exactly live up to my expectations.
So, imagine how excited I was when I found, and devoured, one of the best Italian meals I’ve ever had right here in Indy! I was so eager to try out Sangiovese Ristorante’s new location. Gosh, I love shrimp. You know that scene in Forrest Gump, where Bubba goes on and on, and on, about everything you can do with shrimp?
I never saw anything wrong with Bubba’s passion. If anything, it made me hungry.
Having lived in the South for a good number of years, I was used to being able to get fresh, wonderful, reasonably priced shrimp at every restaurant, and every market. Heck, sometimes the shrimp even came to me. When we lived in New Orleans, the wonderfully sweet man who was the custodian at the school I taught in would go out on his shrimp boat on the weekends and bring his delicious haul back in for me on Monday! Talk about spoiled! Being back in the landlocked Midwest has stifled our constant shrimpiness a bit, but I still try to cook it up often.
