THANKSGIVING IS ON THURSDAY, PEOPLE!!

Anyone else caught off guard with how quickly the holidays popped up this year?  Anyone?  Just me?  I’m hosting Thanksgiving this year, which I love to do, but at three days out, I’m still a little mystified that I’m going to be cooking up a turkey on Thursday.  I wrote out my game plan and grocery list over the weekend, laying out exactly what I need to make, so I guess it’s slowly sinking in, but I really need to get a move-on.

Tis the season to start stuffing ourselves, and our turkeys.  Are you hosting Thanksgiving this year?  I am.  And you know what?  I love cooking Thanksgiving dinner.  Sure, it’s stressful and there’s a lot going on, but it’s absolutely my favorite meal of the year.  I’ve tried a lot of Thanksgiving recipes in my day, and there are a few favorites I always return to.  The Herb Buttered and Brined Turkey recipe featured in this roundup is always my go-to Thanksgiving turkey, and my husband’s favorite “Thanksgiving in a Dish” dressing will make an appearance again this year as well…because if I didn’t make it, husband would be sad, and nobody wants a pouty husband at the Thanksgiving table.

Is anyone else out there having a rough time getting into fall this year?  Fall is my favorite season, and I’m just not feeling it yet.  I’m usually one of those stereotypical Pumpkin Spice loving, boot wearing, sweater snugly people, and I’m just having the toughest time getting in the fall mood.  It could be that it’s still pretty warm and the trees haven’t really started changing yet. I don’t know.  I just know I’m not feeling it, and my not feeling it is annoying me.

Ok, I got that out there.  I was trying to think about what I could say about this dish to draw you guys in, and that’s what I came up with.  (It’s one of those days…)

This simple, healthy mash-up of chicken, veggies, and quinoa was the perfect weeknight dinner for us the other night.  We all enjoyed it, and it will definitely be thrown into the regular dinner rotation around here.  I couldn’t ask for more from a dinner, really.  It’s simple, fresh, healthy, filling, and my kids gobbled it up.  Mom – 1, Picky People – 0.

I love gazpacho in the summertime.  And every year, I don’t make it nearly often enough.  This year, I somehow made it all the way to August before diving in to a big bowl of it, and I’m already kicking myself.

I ran across this recipe online. In fact, it popped up in my Facebook feed, screaming “Make me!”. Never one to argue with a recipe, I figured I better get on it quickly. It’s different from a traditional, chunky gazpacho, but I loved its creaminess and delicious fresh flavor.  It’s creamy without a drop of cream, and so refreshing. I will say that the recipe serves four exactly.  So, if you’re hankering for leftovers, or a second bowl, and you’re serving your family, you might want to double up on things.  That’s not hard, though, because it’s, by far, the simplest gazpacho I’ve ever made.

Some of the best recipes don’t come from cookbooks, or generation after generation of family, time-tested tweaks.  Sometimes, the recipes on the back of a grocery store package are pretty darn good.  (Toll House cookies, anyone?)  This recipe, for our family, quickly became one of those back-of-the-box favorites after I found it on a box of pasta that I’d grabbed at Publix when we lived in Georgia.  I’ve tweaked it a bit from the original, but the ease, simplicity and taste of the one I found on the back of the box are still front and center.  It’s an easy weeknight meal, and perfect for those first few days back at school when everyone is trying to get back in the swing of a routine.

Every time I have spaghetti squash, I say to myself, “Self, we need to have spaghetti squash more often.” It’s such a great, healthy vehicle for so many things, and this latest creation, a deliciously cheesy southwestern inspired cozy casserole of sorts, was a dinner highlight last week. It was fresh and good for us, and surprisingly filling.  A little went a long way, and after a summer of indulgences, I need a few more meals like this one.

This Sweet Corn, Tomato & Pesto pizza is everything wonderful about summer…on a crust.
It’s crisp, fresh sweet corn and bright summer tomatoes, viibrant fresh basil, and zesty garden fresh pesto.  It’s packed with flavor, ridiculously easy to throw together, and on the dinner table (…lunch table, snack table, coffee table. The pizza’s not picky.) in virtually no time at all. It’s just perfect.

I could eat it every day and probably be pretty happy.
