I think it’s here, folks. For real this time.  I think we can (finally) safely say that Spring has arrived and won’t take off again.  I know it’s a risky statement, given the crazy weather we’ve had, but I feel good about saying that this time.  I really do.

A couple of days ago, I met my beautiful sister-in-law, Karin, for lunch at one of my favorite local spots.  The restaurant changes their menu monthly based on what’s seasonally available.  It’s very much farm-to-table, homegrown, and delicious.  They were featuring a spring pea and mint soup that day, and as the sun was shining (finally!) and the birds chirping, I figured I had to give it a try.

Spring is in the air!  Well, kind of.  I mean, we’ve had a couple of really warm days lately and the trees are getting confused, but I think we’re still supposed to get more snow later this week.  I’m just going to ignore it.  Snow or no snow, it doesn’t really matter because the warm days we’ve been blessed with have gotten my taste buds ready for all of the fresh and light that spring and summer have to offer.

I don’t know about you, but this week is a pretty busy one for me.  So busy, in fact, that I contemplated just letting the ol’ blog go this week and not adding anything into the mix until after Christmas.  Then, looking through the leftovers in the fridge, I was reminded that I really should share this one special recipe with you before Christmas hits.  Not only is it beautifully festive for the holiday table, it’s unbelievably delicious, and became an instant hit in our household.  Don’t like beets?  You may change your mind once you try them this way.

In this house, the side dishes generally play second fiddle to the entrée.  I’m usually spending so much time with the main part of the meal that the side dishes are pretty simple, or sometimes, even an afterthought.  THIS side dish, however, takes center stage, and it was absolutely the most exciting thing we had at dinner that night.

Ah, Labor Day weekend…summer’s last hurrah.  A time to gather together, slap on some sunscreen, hang out at the pool one last time, and have a cookout.  In honor of that last hurrah cookout, I’ve put together a list of some of my favorite summer recipes from past posts to ease your menu planning along.  And, now that I’ve had a good look at some of these again, they may be making an appearance at my own house this weekend. Zucchini noodles seem to be all the rage right now and spiralizers are moving from a fancy garnish tool to an everyday kitchen gadget. My friends at OXO asked me to try out their new Hand Held Spiralizer, and of course, I told them I’d love to give it a try!

What to make, though?  As I was trying to figure out what to tackle first with my new gadget, I ran across an old recipe, written on a postcard, from my mother.  I have no idea where this recipe came from.  Probably from the pages of an old, yellowed cooking magazine or from one of her gazillion cookbooks (I come by my book hoarding tendencies honestly).  It’s simply written on a notecard, and this delicious, blast-from-the-past spaghetti salad struck me as the perfect thing to modernize with a little spiralize.

My husband is not a veggie burger guy…at all.  I can’t keep track of how many times he’s given me that “Why would you do that?” look in a restaurant as I order a veggie burger over something else, anything else, on the menu.  I love a good veggie burger, but have found that really good veggie burgers are like finding a needle in a haystack. The restaurant burgers I’ve tried run the gamut from delicious and hearty to mushy and meh.  It’s hard to find a really, really good one.   I’ve tried a few different versions at home, and I’m pleased to announce that this is the first one we all went nuts over, my husband included.

One of the reasons I started this blog was because friends and family often turned to me when they needed an idea for a recipe, or help with one they already had.  It’s no secret that I’m a bit of a cookbook hoarder, and that I love to spend time in the kitchen.  I’ve always loved trying out new recipes. I’m never afraid of being the recipe guinea pig, and Chew Nibble Nosh started out as a place where I could share my findings with my friends and family.  It has since blossomed into much more than I ever imagined, which I am extremely humbled by, but at its heart, it is still a place where I share my guinea pig moments.

When I was young, my mother had this wonderful little garden on the side of our house.  I used to love watching the garden grow each summer, and daily trips out to pick fresh tomatoes, snap peas and zucchini were a highlight.  I remember spending my summer days outside, playing with friends, and we’d snack on sugar snap peas, fresh from the garden, as we played. The zucchini always fascinated me, though, because there were some years when nothing would grow, and others when we’d end up with zucchini as long as our arms, that seemed to weigh as much as a small child.  My mom would make zucchini bread after zucchini bread after zucchini bread, and we’d laugh at the size of our ginormous zucchini.  They were like veggie snacks for giants.

When it comes to summer food, what do you look for?

I look for light, crisp, clean, fresh, and flavorful.  In the sticky summer heat, I don’t want food that will weigh me down.  I crave tastes that will refresh me, enlighten me, and that take advantage of the bounty that summer markets have to offer.

This salad is EXACTLY what I look for.

This quick and easy summer salad is the perfect summer picnic recipe go-to.  You can make it up ahead of time, and the longer it rests, the more the flavors mingle.  It was terrific the night we had it, alongside grilled steak, but even better the next day when I grabbed a bowlful for lunch.
