Have you ever had one of those nights when dinner just completely sneaks up on you?  That was last night for me.  I’d had a busy day, and was a little drained.  The kids were home from school, homework was done, I had a half an hour until my husband would be on his way home, and we needed to eat on the early side of the evening because Avery had to be somewhere.  I told myself that I’d sit down for a half an hour and just take a breather.

And just like that, it’s September and I’m back to playing extracurricular taxi driver after school. Wow, that was fast.

Getting back into the swing of things always takes some adjustment.  We’re all going through that transition now, and one of the ways I can help navigate the crazy is with some simple meals to throw together come dinnertime.  Plus, if I can work it so clean up time is minimal, that’s a huge bonus.

Stir fries are a great way to throw together a complete meal in a hurry, and this one was really tasty.  There are a couple of extra steps with this one, but it’s still a really simple meal to throw together when time is short and life is nuts.

It’s that time of year again…Super Bowl Weekend!!

Football parties give me an excuse to make a meal out of my guilty pleasure…munchies.  It doesn’t happen often, but I love when I can fill my plate with a little bit of this, and a little bit of that.  Wings are a game watching staple in our house.  I love a good Buffalo wing, but this time around, I wanted to try something a little different.

 Earlier this week, I shared a recipe with you for some homemade Vietnamese Summer Rolls.  This is the salad I served alongside them.  Even if you’re not making Summer Rolls for dinner any time soon, this salad is light and fresh, and perfect for warm summer days.

I start by prepping my cucumbers.  It’s a simple salad, but the cucumbers needs some time to hang out with some salt, so that some of their excess moisture pulls away.  I peeled and sliced up 1 1/2 lbs. of cucumbers and tossed them with some kosher salt.  Then, they hung out in a colander in the sink to drain for about an hour.

Thai Coconut Chicken Soup - Chew Nibble NoshThis was one of those recipes that I was fully prepared to serve up to my family at dinner time, and then hear moans and groans from the kids.  I knew Aaron would like it, but was sure that the kids would be begging for another option.  Imagine my surprise when everyone loved it!!

This soup is so simple, different, and really tasty.  And even though we were all perfectly healthy, we all agreed that if we happened to have a cold, it would be the perfect remedy.

Before I started cooking, I gathered all of my ingredients.

My goodness, this summer flew by.  I know it’s just the beginning of August, but my girls start school next week!  We packed a lot into this summer, more than we’ve ever packed before.  We’ve been nonstop busy with camps and vacations, day trips and playdates.  I really can’t complain.  It’s been a lot of fun!

I love to have friends over for dinner in the summertime.  Everyone is pretty laid back, our schedules are empty, we just kick back, relax and enjoy each other’s company with some good food.  This summer, we were so busy that I really didn’t get to entertain as much as I like.  There were no big summer cookouts, because everyone was as busy as I was.  So, Friends, I apologize.  I’ll make it up to you.

Boy, has this been a week!

After today, we only have one more week of school down here.  As anyone with kids in school knows, the last couple of weeks are CRAZY!  I’ve been so busy that my Moment of Zen this week was being able to sit down for a couple of hours while my car was being serviced at the dealership.  Kind of pathetic, eh?

Thankfully, we were all able to settle in together for dinner last night. I was short on time, but tried out this new recipe because it promised dinner in a flash.  It really was quick and easy, plus the fact that it tasted so good didn’t hurt either!
