I’m pretty sure that when people come into my kitchen, they might look in one corner of it and think I have a problem with hoarding. You see, in one corner of my kitchen, there’s a stack of cooking magazines. It’s a pretty large stack, if I’m being completely honest. One of the biggest advantages for us in moving to Indianapolis last summer, was that we’d be MUCH closer to family. Before our move here, we were never closer than a ten-hour drive, anywhere we lived over the years. We got to spend time with family a few times a year, and it seemed that every time I saw my nieces and nephews, they’d grown another foot. Now, we get to see everyone much more often! (Although, the kids still seem to be growing at an alarming rate…I’m talking to you, Connor.) It’s really special, and we truly appreciate it after being away for so long. Warmer weather means better produce! This quick and delicious side dish is the perfect thing to throw together after a visit to the farmer’s market on a warm spring day, or even just a visit to the local grocery store.
I started by prepping all of my veggies. I chopped up a bright, yellow pepper, and some crisp green onions. I thinly sliced up a bright green zucchini, and then peeled and chunked up a small eggplant. Finally, I halved a pint of grape tomatoes

A few days ago, I returned from a Girls Week at the beach with my daughters, Mom, Aunt and cousins. We had a fantastic time together and it was so nice to just hang out and reconnect, since we don’t get to see each other that often. We live in different states, and all lead very busy lives, so we were eager to park our chairs in the sand and just “be” for a week. I think the trip did all of us some good!
