Back to school, back to crazy, back to my assignment as a personal Uber for my kids.  Everything has kicked back into gear here and we are officially back in the swing.  During the craziest nights, I rely heavily on my slow cooker.  I have a ton of slow cooker recipes on this blog, with good reason.  I use it a lot.  I remember a time when I rarely used my slow cooker at all, and it sat collecting dust in my pantry.  No more!  I break it out at least once a week.  And you should too!  It makes dinner time a whole lot easier.

I really don’t know what to call this.  It’s not quite a soup, isn’t really a chili, not exactly a stew.  What I do know is, it’s really tasty and a great way to warm up on a crazy windy day like today.  (I sent my dog outside a little while ago, and I was unsure if I’d get him back.  It’s that windy.)

This one pot meal is super simple to throw together, and my entire family really enjoyed it.  It’s definitely a great one to keep pantry staples on hand for, to throw together on a busy night when you’ve, quite honestly, forgotten about feeding anyone dinner until it’s…ahem…time for dinner.

IT’S COLD!

I really can’t complain this winter.  We’ve had it pretty easy, especially compared to the East Coast. (Sorry, guys.)  We have, however, had some crazy cold snaps, in between the warm snaps, and we’re currently in the middle of one of them.  I’m wishing I’d saved this recipe to make for tonight, instead of last week when it was warmer.  However, if I can help warm you up with this, then it all worked out.

Crock Pot Mexican Chicken

Crock Pot Mexican Chicken - Chew Nibble NoshThis is one of those “It’s so Easy, it’s Almost Embarrassing”  recipes.  Since we all know that it takes a lot to embarrass me, I figured I’d go ahead and share it.  A friend of mine passed this recipe on to me years ago, and it’s been in a pretty steady rotation at my house ever since.  Crock Pot dinners don’t get much simpler, so it’s perfect for a crazy busy run-the-kids-everywhere kind of day.

All you need is a can of black beans, a can of corn, a block of cream cheese, a jar of salsa, and about 1 1/2 pounds of boneless, skinless chicken.

Well, it took a couple of weeks, but now our nights are busy again.  After school activities have kicked off this week.  We’re exhausted and very thankful it’s Friday. I don’t know how some families do it.  We are only busy a couple of nights a week and it throws us for a loop.  All of you out there with something going every night amaze me!

There’s a reason I hold onto cookbooks.  Like photo albums, my cookbooks hold memories and when I open one up that has sat on a shelf for a while, those memories come flooding back.  I was trying to figure out my meals for the week and, after having no luck with the cookbooks and recipes I have stashed in my kitchen, I moved my search to the next logical place, the laundry room closet.  There, in my stash of old, haven’t been used in a while books, I came across a cookbook that I’d bought the first year we were married.  Memories of my first little kitchen and the meals just the two of us shared came back to me in an instant.  I knew at once which recipe I was going to make from that cookbook this week.

What a strange winter we’ve had so far!  I know, I know…I live in Georgia.  “Winter”, in the true sense of the word, doesn’t really exist here.  From what I’ve gathered, though, it’s been pretty calm all over.  That’s all well and good, but one of my favorite things about chilly winter nights is being able to make a big pot of soup for dinner.  Since we haven’t had many cold nights this year, my soup making has hit a bit of an inspiration road block.  Then…last weekend happened.  Last weekend was MISERABLE! Not snowy, winter weather, but rainy, gray and gross all weekend long.  Sunday called for soup.  No, it begged for soup.  So, I complied.
