Cheesy Southwestern Spaghetti Squash Bake

Cheesy Southwestern Spaghetti Squash Bake - Chew Nibble Nosh

Every time I have spaghetti squash, I say to myself, “Self, we need to have spaghetti squash more often.” It’s such a great, healthy vehicle for so many things, and this latest creation, a deliciously cheesy southwestern inspired cozy casserole of sorts, was a dinner highlight last week. It was fresh and good for us, and surprisingly filling.  A little went a long way, and after a summer of indulgences, I need a few more meals like this one.

Chilled Summer Veggie Salad

When it comes to summer food, what do you look for?

I look for light, crisp, clean, fresh, and flavorful.  In the sticky summer heat, I don’t want food that will weigh me down.  I crave tastes that will refresh me, enlighten me, and that take advantage of the bounty that summer markets have to offer.

This salad is EXACTLY what I look for.

This quick and easy summer salad is the perfect summer picnic recipe go-to.  You can make it up ahead of time, and the longer it rests, the more the flavors mingle.  It was terrific the night we had it, alongside grilled steak, but even better the next day when I grabbed a bowlful for lunch.

Slow Cooker Chicken Tortilla Soup

It’s almost time for Cinco de Mayo!  Yay!  But, Cinco de Mayo falls on a Tuesday this year.  Boo.

Mid-week celebrations can definitely throw a wrench in your plans, especially when those plans include eating and drinking.  Luckily, you can celebrate with this simple, healthy, family friendly, weeknight-friendly, Cinco de Mayo-friendly soup!

I love tortilla soup, and one of my favorite soup recipes of all time can be found here.  I do love that recipe, but when I came across this one, I was struck by how fresh and light it looked.  I’m all about fresh and light these days.  I loved that it was chock full of veggies, and super colorful.  It looked like it could balance out a margarita or two and a piece of Tres Leches cake quite well.  (Everything in moderation, right?  It is Cinco de Mayo, after all.)

Black Bean and Corn Topped Potatoes

I always underestimate the power of a baked potato at dinner.  We don’t have them often, but when we do, the kids are thrilled, and we make it through dinner moan free.  If I were smart, we’d have baked potatoes every night.  But, I’m not often that smart.

These Mexi-topped baked potatoes are a deliciously filling alternative to your typical weeknight entree.  Serve them alongside a salad and you’ve got yourself a simple weeknight dinner.

Pasta Jambalaya

While I consider myself lucky to have kids that aren’t as picky as some other kids I know, my kids still have their own issues.  Emily is an adventurous eater.  She’ll try anything, and when she likes something, she really likes it.  For as long as I can remember, her favorite foods have been artichokes, feta cheese, beans, and capers.  (Despite my many attempts to convince the child that capers are a garnish or an add on, she doesn’t believe me.)  Not exactly what you hear most kids asking for at the dinner table, right? The problem lies in that she likes very specific flavors, and if the flavors we’re having for dinner don’t mesh with her taste buds, we get a lot of pouts and whines.

Right now, as you’re reading this, (unless you’ve run across this months from now on Pinterest or Google…), I have my toes in the sand and a book in my hand on one of the loveliest beaches in South Carolina.  It’s vacation time…finally.

This summer has been a busy one!  We’ve relocated our family to a new house ten hours away from the last one, we’ve settled into said house and gotten into our new Indy groove.  The girls have gone to camps, and lessons, and made loads of friends along the way.  We’ve hosted guests from near and far and before we know it, school will be starting again in just one more week.

Black Bean, Corn and Avocado Salsa

Tomorrow morning, the girls and I are heading home after a two week long trip up to the Midwest.  Namely, Michigan and Indiana.  We were hoping to escape the heat in Georgia, and that worked for the first half of our trip, but wow…did it get hot!  Despite the heat wave, we’ve had a wonderful visit.

We packed a lot of activity into those two weeks, but best of all, we got to spend a lot of time with family and friends that we don’t get to see often enough.

It’s been a fantastic trip.
