Instant Pot Loaded Potato-Cauliflower Soup

So, I am not a big Black Friday shopper.  I have never been out to the stores to grab a deal early in the morning.  I’m usually kitchen-hungover the day after Thanksgiving and enjoy every last-minute of staying cuddled and warm under the duvet when Friday rolls around. The idea of storming my local mall with millions of other shoppers the day after Thanksgiving, and battling other bleary eyed moms for the last Hatchimal is my personal version of hell.  And for that reason, it just doesn’t happen.

In this house, the side dishes generally play second fiddle to the entrée.  I’m usually spending so much time with the main part of the meal that the side dishes are pretty simple, or sometimes, even an afterthought.  THIS side dish, however, takes center stage, and it was absolutely the most exciting thing we had at dinner that night.

I have a lot of friends who think it’s pretty funny that I’ve held down more odd jobs than I can count.  You name it, and I probably dabbled in it at one point in my life.  When I was in high school, I worked in a local bakery.  Besides the amazing cakes, breads, pastries and desserts we whipped up, we had a pretty mean lunch menu.  That bakery was where I was first introduced to cauliflower soup.  Up until that point in my life, cauliflower was just…cauliflower.  Nothing spectacular.  It was usually the last to go on a veggie tray and we had it with dinner a lot, but it was just cauliflower.

First off, I owe you an apology.  I fully intended on sharing the recipe with you that I made the other night for dinner.  Sadly, it didn’t turn out to be as amazing as I had anticipated.  My husband is a very gracious eater.  If he likes something, he tells you.  If I ever make something and have to utter the words, “So, do you like it?”, I know it’s just “Meh”.  So, I’m sorry I don’t have an exciting, easy dinner to throw your way today.  I do, however, have an easy and delicious side dish.  In fact, it’s what we had with the “Meh” chicken I made the other night!
