I don’t know about you, but this week is a pretty busy one for me.  So busy, in fact, that I contemplated just letting the ol’ blog go this week and not adding anything into the mix until after Christmas.  Then, looking through the leftovers in the fridge, I was reminded that I really should share this one special recipe with you before Christmas hits.  Not only is it beautifully festive for the holiday table, it’s unbelievably delicious, and became an instant hit in our household.  Don’t like beets?  You may change your mind once you try them this way.

A few weeks ago, I was using my hand mixer while baking up something in the kitchen, and I mentioned to my husband that it seemed that the mixer I’d received as a wedding gift, nineteen years ago, was finally reaching the age of retirement.  It just didn’t have much get-up-and-go anymore, and it sounded pretty pitiful.  It was kind of sad, and bittersweet…mainly because I’m realizing that I’m old enough to send reliable appliances into retirement.  Not too long after the old mixer was put out to pasture, I heard from my friends at OXO, and they asked if I’d like to try out their new OXO On Illuminating Digital Hand Mixer! Do they have perfect timing, or what?

 I truly can’t believe that it’s time for this again.  Where did this year go?  It seems like just yesterday, I was in my kitchen in Georgia, complaining about the un-wintery winter, and baking up cookies to send to food bloggers in different corners of the country for The Great Food Blogger Cookie Swap 2012.  But alas, a year has passed and now I’m in my office in Indiana, actually enjoying the wintery winter (So far. I’m sure I will get annoyed at some point.) ready to write about 2013’s cookie swap.  AMAZING.

Christmas dinner, for us, was a small affair this year.  It was just the four of us.  Pretty quiet, and the youngest two of the four wore their pajamas to dinner.  (The cast of “Downton Abbey” would be mortified.)  It was a lazy, laid back day over all.  One that we all needed and really enjoyed.  And at the end of it, I was left with a cozy holiday feeling, and an excessive amount of Christmas ham leftovers.

I hope you guys like ham, because it’s likely that I’m going to throw quite a few hammy favorites your way in the coming weeks!


Oh, the weather outside is…not so frightful.  The fire?  Not really so delightful.   In fact, the weather is terribly un-Christmassy. Does Mother Nature know that it’s December?  Does she have any idea that Christmas is just a few short weeks away?  I know I probably sound like a big Scrooge to most of you, and those of you who live up north are rolling your eyes at me because you’re enjoying the warm weather you’ve had and think I’m crazy, but I’m having a very hard time getting into the Christmas spirit when I can still break a sweat just walking to my mailbox!  Bah Humbug!

It’s finally here!  If you follow me on Twitter (@chewnibblenosh) or take a peek at my Facebook page every once in a while, you may have heard me mention how excited I was to be a part of the first annual Great Food Blogger Cookie Swap.  Thanks to our hosts, Lindsay from Love and Olive Oil and Julie of The Little Kitchen, myself and over 600 food bloggers from across the country (and Canada!) participated in a cookie swap of massive proportions over the past couple of weeks.  Each participant baked a batch of cookies and then sent a dozen to three other participants, Secret Santa style.
