Ah, Labor Day weekend…summer’s last hurrah.  A time to gather together, slap on some sunscreen, hang out at the pool one last time, and have a cookout.  In honor of that last hurrah cookout, I’ve put together a list of some of my favorite summer recipes from past posts to ease your menu planning along.  And, now that I’ve had a good look at some of these again, they may be making an appearance at my own house this weekend. Bonus!

With the 4th of July right around the corner, I’m pretty sure a lot of you are in BBQ menu planning mode. If you’re thinking of throwing a macaroni salad into the mix, this is your guy.  This salad is delicious, and fresh, and so easy to throw together.  There’s something about a good BLT that just makes people’s hearts sing.  So, turn that sandwich favorite into a scoopable summer salad, and you’ve got a winner!

First, I cooked a pound of macaroni noodles in a big pot of salted water.

Ah, Labor Day weekend…the last great hurrah of summer, before we turn our attention to changing leaves, fall colors, and pumpkin spiced everything.  I hope you’ve all had a wonderful summer, and that you have a chance to celebrate the day off this weekend in a special way.

If you’re heading to a cookout this weekend, and are looking for something to bring, this is a great, fun, fresh summer salad to feed a crowd.  Another bonus?  You can make it ahead of time, so if you’re the one hosting the cookout, you don’t have to do it last minute.
