There’s something innately comforting in a French Dip sandwich for me. If it’s cold and dreary, this is the sandwich I want. And as the days are going to start kicking into “cold and dreary” mode pretty darn soon, I’m really happy that I managed to stumble across this recipe! These Ultimate Slow Cooker French Dip Sandwiches are perfect winter weather food, football party food, comforting “My toes are cold” food. I love lasagna, but it’s not something I make often. It can be time consuming, depending on the recipe, and unless I have a large chunk of time to play around with in the kitchen (which doesn’t happen often), it’s just not on my recipe radar.
This version, however, changed all of that.
This Skillet Lasagna is so good that two days later, I’m still thinking about how good it was. The more I ate, the more I enjoyed it, and I can safely say that THIS lasagna will be making multiple appearances at our dinner table. Is anyone else out there having a rough time getting into fall this year? Fall is my favorite season, and I’m just not feeling it yet. I’m usually one of those stereotypical Pumpkin Spice loving, boot wearing, sweater snugly people, and I’m just having the toughest time getting in the fall mood. It could be that it’s still pretty warm and the trees haven’t really started changing yet. I don’t know. I just know I’m not feeling it, and my not feeling it is annoying me.

Back to school, back to crazy, back to my assignment as a personal Uber for my kids. Everything has kicked back into gear here and we are officially back in the swing. During the craziest nights, I rely heavily on my slow cooker. I have a ton of slow cooker recipes on this blog, with good reason. I use it a lot. I remember a time when I rarely used my slow cooker at all, and it sat collecting dust in my pantry. No more! I break it out at least once a week. And you should too! I know what you’re thinking. Stew in July? Stew is a misleading name for this. It’s light and summery, and chock full of crisp summer veggies, but consistency wise…yes, it’s right up there with a stew. It’s a really tasty way to bring dinner to the table any night of the week, and it all comes together in one pan, so clean up is a breeze. Sorry, guys. I know I’ve been a little lax lately in sharing new recipes with you. Summer is TOUGH, though! I’d love to say our summer schedule is nothing but laziness, pool days, and endless time, but anyone with kids knows that it just isn’t.
