If you were to ask me what my all time favorite pasta sauce is, I would answer, without hesitation, that it is THIS Bolognese sauce.  I posted that recipe a few years ago, and things haven’t changed.  It’s still my all time favorite.

That said, it’s a time-consuming sauce.  One that’s meant for a day when I have time to spend in the kitchen.  On days when I don’t have time to spend in the kitchen, this lightened up, chicken-based Bolognese sauce is a fantastic alternative.  It came together in minutes, and my family devoured it in just a few as well.  It’s fresh and light, and great for a night when you’re craving comfort food, but not so much craving the work involved.

After being married for close to nineteen years (next week!) to my husband, I’ve gotten to know him and his tastes pretty well.  I have to admit, he’s very polite when it comes to dinner time.  He never complains, even if what I’m serving for dinner isn’t exactly what he was in the mood for. It doesn’t matter if we’re having cereal or a four course meal, he’ll eat it with a smile on his face.  Although, with the cereal, he probably sneaks back into the pantry after dinner. And he’s very patient as I snap picture after picture of dinner, trying to get the right shot, before serving it up.  I know that’s not a common problem in most households, but in our house, it’s a “thing”. He’s a trooper, and always has been, even before I started this blogging gig.

May is what’s CRAZY.  I have yet to talk to one parent of school aged children this month who isn’t completely bogged down with school projects, after school activities, end of the year recitals and concerts, class trips, sporting events, etc. etc. etc.  May is just nuts.

Back when my husband and I were first married, I remember buying a cookbook that boasted “Four Ingredient Meals”. I made a few things out of it, and then, somehow, the book disappeared.  I either threw it away out of frustration or sold it in a garage sale.  I honestly can’t remember.  What I do remember is the recipes I made from that cookbook were all so horrible, it was almost comical.

THIS four ingredient entrée, however, is worth keeping.  It’s so simple, coming together in minutes, and was really, really tasty.

So, you know my picky eater, Avery?  Well, Avery has recently developed an obsession with competition cooking shows.  Her favorite being Worst Cooks in America on Food Network.  (If you haven’t watched it, you should check it out.  It’s really kind of fantastic.)  The whole premise of the show is celebrity chefs coach horrible cooks from around the country, and turn them into REAL, honest to goodness chefs.  It’s a pretty incredible transformation, and actually a pretty funny ride along the way.  One, of many reasons, why a lot of the people involved in the show don’t know how to cook, is because they are honestly afraid of trying new things. (Sound familiar?)

This is my new favorite comfort food meal for 2016.

It combines one of my favorite cozy Italian dishes, creamy Carbonara pasta, with my favorite winter veggie.  It comes together quickly, and simply, and just a few fresh, honest ingredients pack a whole lot of flavor.  In fact, the first time I made it, Avery (my youngest, and not my most adventurous eater…but she’s trying) commented that “Wow, the noodles give the brussels sprouts such great flavor!”  Ha!  Well, no, probably the other way around, but whatever works in her little head to get her to eat her veggies is fine by me.  That’s something she wouldn’t have done last winter.  My family enjoyed it so much that I’ve made it twice in the past few weeks, and we can’t get enough of it!

This, my friends, is EXACTLY the recipe we need for today.  This morning, at 5:00 AM, my phone pinged, telling me that my kids officially had their first two-hour weather delay of the season.  We only got a couple of inches of snow overnight, but it came down at just the right time to throw a kink in the bus schedule.  The kids were thrilled, I was excited to set my alarm for a little bit later, all was well with the world.  My husband texted me a while later and suggested I stay at home, if possible, because the road conditions stunk. OK, sounds good to me.

Thursday nights have become increasingly busy around here, so I’ve now dubbed them Slow Cooker Thursdays.  There’s no way I’m going to be able to cook a dinner in between shuttle stops, so I’m thankful I have a good number of tasty slow cooker meals in my back pocket.  This one can now be added to the list.

I honestly can’t remember a time where I’ve cooked whole, bone-in pork chops in the slow cooker, and I was pretty happy with how they turned out.  The pork was fall-off-the-bone tender, and had a ton of flavor from a delicious herb-garlic rub.  It was topped with tomatoes, zucchini, and a speedy quick gravy that I made from the leftover juices after cooking.
