Ok, I got that out there.  I was trying to think about what I could say about this dish to draw you guys in, and that’s what I came up with.  (It’s one of those days…)

This simple, healthy mash-up of chicken, veggies, and quinoa was the perfect weeknight dinner for us the other night.  We all enjoyed it, and it will definitely be thrown into the regular dinner rotation around here.  I couldn’t ask for more from a dinner, really.  It’s simple, fresh, healthy, filling, and my kids gobbled it up.  Mom – 1, Picky People – 0.

 Before I get into the heart of this recipe, let me just state that this tomato-onion-garlic-basil concoction is delicious on pork chops.  It would be delicious over chicken, or delicious over fish.  It would be delicious served over sliced baguette as an appetizer, spread on a pizza, or delicious simply eaten out of the pan with a spoon (I’m guilty).  If you haven’t guessed yet, it’s really good stuff.

And it is so simple and fresh, and perfect for a busy back to school weeknight.

When it comes to summer food, what do you look for?

I look for light, crisp, clean, fresh, and flavorful.  In the sticky summer heat, I don’t want food that will weigh me down.  I crave tastes that will refresh me, enlighten me, and that take advantage of the bounty that summer markets have to offer.

This salad is EXACTLY what I look for.

This quick and easy summer salad is the perfect summer picnic recipe go-to.  You can make it up ahead of time, and the longer it rests, the more the flavors mingle.  It was terrific the night we had it, alongside grilled steak, but even better the next day when I grabbed a bowlful for lunch.

A couple of weeks ago, as I was trying to jam yet another something into my already full freezer,  I realized that said full freezer was borderline ridiculous.  I had frozen half pounds of ground beef, turkey, sausage, and chicken coming out my ears, two small pork roasts that I’d trimmed off of larger roasts from other meals, a pot roast, frozen leftovers that I’d saved for a rainy day (Apparently, snow doesn’t count, so we hadn’t touched them.) and that huge bag of chicken breasts that I always keep on hand from Costco.  And that’s just the meat department!  There were frozen veggies, sauces, breads, appetizers, pizzas, and some mystery items thrown in there too.

Alrighty then.  Thanksgiving’s over, so what do we have?  Leftover turkey!!  I think many would argue that Thanksgiving leftovers may be the best part about the Thanksgiving feast.  So, when you’re finally hungry again after the gorge-fest that was Thursday, here’s a deliciously different, and healthy way to take care of some of those leftovers.

I love acorn squash, and stuffing it like this with a savory mixture of healthy quinoa, leftover turkey, cranberries, and some feta cheese (along with some other goodies) makes for a deliciously simple dinner.  Pair it with a salad, and you’re good to go.

It’s hard to believe that summer is already winding down.  My girls start school a week from now, but I know a lot of kids that have already started…and a few that don’t start until after Labor Day, so those of you in that category can just ignore my end of summer talk for a while.  What a summer we’ve had.  I fully intended on this summer being a little less busy than last summer, when I felt like I was constantly going, going, going.  Well…it didn’t happen.  We had a busy, but wonderful, summer and it’s flown by in the blink of an eye.

This is one of those recipes that I’d pinned to my Pinterest feed ages ago, and I finally got around to trying it.  Now, I’m bugged that it took me so long!  This easy, healthy, baked quinoa dish makes for an absolutely delicious side, or in heftier portions, a super satisfying meatless main dish.  It’s chock full of fresh summer flavor, and takes just minutes to throw together.

I started by cooking some quinoa.  One cup of dry quinoa yields about three cups of cooked grain. You need about two and a half cups of cooked quinoa for this dish.  So, while that was cooking on the stovetop, I prepped my other ingredients.

What is it with the end of the school year?

It seems that every year, the end of the school calendar gets busier and busier.  This year is no exception.  We are scheduled to the max, every single one of us.  Between school projects, recitals, concerts, field trips, assignments, after-school activities, and deadlines, this Mama needs a glass of wine and a day by the pool.

A few days ago, I returned from a  Girls Week at the beach with my daughters, Mom, Aunt and cousins.  We had a fantastic time together and it was so nice to just hang out and reconnect, since we don’t get to see each other that often.  We live in different states, and all lead very busy lives, so we were eager to park our chairs in the sand and just “be” for a week.  I think the trip did all of us some good!  Oh, and the Mojitos helped too.

Never one to shy away from a food trend, I’m happy to say that I’ve finally jumped on the quinoa bandwagon.  Have you heard of quinoa?  If you haven’t, no offense, but I think you may be living under some sort of culinary rock.  If you regularly browse the food blogs, play around with the recipe boards on Pinterest, watch cooking shows, or frequently read any cooking or health magazines, you’ll have bumped into quinoa (pronounced KEEN-wah).  It’s taking the recipe world by storm…so I figured I’d join in.
