Spring is in the air! Well, kind of. I mean, we’ve had a couple of really warm days lately and the trees are getting confused, but I think we’re still supposed to get more snow later this week. I’m just going to ignore it. If you live in the Indianapolis area, you’ve probably heard the buzz about the new Market District store that has opened up in Carmel at 11505 N. Illinois Street. It’s really spectacular and, if I’m being completely honest, I’m a bit of an addict. It’s only a few minutes from our house and I find myself there a lot lately. (In fact, I’ve been there twice since Sunday.) I was lucky enough be able to attend media events and tours on opening day, and with the behind-the-scenes knowledge I gained, I assure you that it really is a special place, full of amazing people who honestly, truly love their jobs. It’s hard to believe that summer is already winding down. My girls start school a week from now, but I know a lot of kids that have already started…and a few that don’t start until after Labor Day, so those of you in that category can just ignore my end of summer talk for a while. What a summer we’ve had. I fully intended on this summer being a little less busy than last summer, when I felt like I was constantly going, going, going. Well…it didn’t happen. This is one of those recipes that I’d pinned to my Pinterest feed ages ago, and I finally got around to trying it. Now, I’m bugged that it took me so long! This easy, healthy, baked quinoa dish makes for an absolutely delicious side, or in heftier portions, a super satisfying meatless main dish. It’s chock full of fresh summer flavor, and takes just minutes to throw together.
I started by cooking some quinoa. One cup of dry quinoa yields about three cups of cooked grain. You need about two and a half cups of cooked quinoa for this dish. There’s just something about roasted chicken that comforts me. You walk into a house where a chicken is roasting and it just smells so good, and it feels cozy right away. The problem is, a lot of times, roasted chicken just ends up tasting like…well…chicken. Not that there’s anything wrong with that, but when I can find a roasted chicken recipe that’s packed with flavor on top of that already-there chickeniness (Yes, I made that up.), I declare it a winner. Well, after a perfectly beautiful and mild month of June, and first bit of July, summer really decided to kick things into gear this week. The past few days have been hot! Not pleasant hot, either, but that sticky, thick hot that smacks you in the face as soon as you step out the door and knocks the oomph right out of you.

I know what’s happening right now. I have some Greek friends. They are looking at this picture and saying, “That’s not Pastitiso!” OK, I get that. It’s not traditional Pastitiso, but it works!
Pastitiso is a hearty, comforting, Greek dish which, I guess, could be considered a Greek version of lasagna. A thick meat and tomato sauce is layered with pasta, onions and a thick, butter and cheese filled cream sauce. It’s pretty good stuff, but not exactly something I add to our weekly menu often. We’re back! Disney World was a ton of fun, and now I’m in clean-up mode. Unpacking from a trip may top my list of undesirable activities. I spent the morning tackling the pile we unloaded from the car. It really didn’t seem like we took THAT much stuff, but I guess we did. The last batch of clothes are in the washer, and I think I’ve managed to unpack all of the little, random bags we came home with. So, now…I can finally get back to the blog! There’s a running joke in the movie “Mermaids” about how Cher’s character, a busy, half crazed mother of two girls (Hmmm…that sounds familiar), only feeds her girls appetizers for dinner. The only cookbook she’s ever opened is called Fun Finger Food. As a teenager, I thought that was hilarious. Who would do that? As an adult, I totally appreciate it. I love when I’m at a party or get together and there’s just a spread of appetizers to munch on! I think this is one reason why I love holiday parties and open houses so much.
