Monster Cookies

I’m all for elaborate holiday recipes, don’t get me wrong, but sometimes life gets in the way and you want to have something special for, oh let’s say, Halloween, but you’re short on time and energy.  That’s when adding a simple touch to a familiar favorite can make all the difference.  Fun? Check.  Sanity in place after not having to deal with five dozen meticulously decorated Candy Corn cookies?  Check.

Halloween is creeping up, and before you know it, little ghosts and goblins will be running up and down the streets showing off their costumes and filling their trick-or-treat bags to the brim.  What happens when they get home?  Well, the annual “Candy Sort”, of course.  Halloween isn’t Halloween without taking careful inventory of every last bit of sugar in your bag.  Everything has a pile, from the prized and elusive full-sized candy bars, right down to those weird little peanut butter taffies in the black and orange wax paper wrappers.

I just saw our weather report for Halloween.  It’s supposed to be miserably rainy and gross.  Yuck!  What a bummer.  I haven’t told the kids yet.  I’m holding out for some sort of Halloween miracle, but the forecast looks pretty dim.

I knew I would make these cookies again soon, but I may just have to make them again for Halloween to raise the spirits of my most-likely-soon-to-be-sad Despicable Me Minion and Witch.  My little trick or treaters love these cookies, and ever since the last one disappeared, they have been asking me to make more.

Just a couple more days until Halloween!!  Are your kids bouncing off the walls yet?  Mine are.  There’s nothing like the promise of a giant bag of candy and a subsequent sugar hangover to get my kids excited.

This weekend, we went to my husband’s department Halloween party. I wanted to bring something festive, but was short on time.  The endless amounts of cute Halloween projects that I’d pinned on Pinterest would have to wait.  I wanted quick, simple, and fun.

Halloween Peanut Butter and Toffee Bark

How is it already time for Halloween?  I’ve gotten the kids costumes ready, bought the candy, even dressed up for a Halloween party myself, and I still can’t get my head wrapped around tomorrow being October 31st.  The fact that most stores are already shoving Christmas at me is almost too much for me to handle.

Despite my disbelief, it appears that we’ll be trick or treating tomorrow night.  Before that, though, my girls have to go spend the day at school.  I know their teachers are going to be exhausted by the end of the school day, after spending it with hoards of wannabe princesses and ninjas.  I wanted to make a little Halloween treat for them, and I wanted the girls to help, so I settled on this delicious chocolate bark from Bon Appetit magazine.
