One dinner my kids can always agree on not pouting over is Chicken Parmesan.  Who doesn’t love Chicken Parmesan?  Breaded chicken, rich tomato sauce, pasta, and cheese?  It’s a carb lovers dream.  When I saw these little stuffed zucchini boats, though, filled with all of the flavors of our favorite chicken parm but in a slightly-less-calorie-packed frame, I decided to give it a whirl.  After all, this time of year, I’m saving all of my calorie splurges for cookies and party food.  Dinner needs to keep me satisfied, but in the month of many splurges, I really don’t need it to weigh me down.

I’ve recently come across a pretty spectacular cookbook find.  It’s so great, in fact, that I could probably cook from it every night of the week and be perfectly content.  When I first look through a cookbook, I dog ear the pages of recipes I’d like to make.  After I closed this book, almost every page corner was turned down.  Which book, you ask?  The Skinnytaste Cookbook, by Gina Homolka.  I’ve been a fan of Gina’s blog for years, and I’d heard that she’d put out a cookbook, but I hadn’t gotten my hands on it until a couple of weeks ago.

Quinoa Tabbouleh

Quinoa Tabbouleh - Chew Nibble Nosh.I think I found my new favorite salad for spring and summer.  I’ve always been a fan of classic, light, Middle-Eastern flavors like lemon, olive oil, garlic, and herbs.  So, keeping that in mind, I’ve always loved Tabbouleh.  The salad is traditionally made with bulger, tomatoes, olive oil, lemon, mint, and lots of parsley.  I’ve even had it with couscous before, but I loved the idea of mixing it with protein packed quinoa and crisp, cool, cucumbers.

Picture it:  “Sicily, 1922…”  I’m kidding.  I couldn’t resist.

Let’s start again.  Picture it:  It’s a cold, dreary day.  That icky, gross, rainy, cold, mucky, windy, ick kind of day that we all hate going out in.  That was my yesterday.  When a truly gross day rolls around, I usually want comfort food for dinner.  Preferably, something warm and cozy.  This dinner was exactly that.  It’s not the prettiest meal to look at, I fully recognize that, but it sure was tasty.  Simple, homey, good for you…and both of my kids gobbled it up. (Which, if you’re a parent, you know is a miracle in itself.)
