I love a good challenge, and when the good people at Driscoll’s Berries asked me if I’d like to participate in their Muffin Madness promotion for the month of March, I couldn’t resist!  All this month, Driscoll’s will be featuring mouth-watering berry muffin recipes on their website.  You’ve heard of March Madness, right?  Well, Muffin Madness is a whole lot tastier!

They have some amazing recipes on their site, but I decided to try to concoct my own variation.  My all-time favorite berries are sweet, tart raspberries.  My favorite muffins are those yummy pumpkin cream cheese muffins you see in, virtually, every coffee shop and cafe during the fall months.  I thought a raspberry cheesecake muffin sounded like the perfect Spring variation to try.

I figured we needed a breath of Spring air over here.

My goodness, it’s cold!  And while it’s crazy cold here, I know that it’s even crazier colder in a lot of places.  Yes, it’s winter.  We get it.  We aren’t complaining.  Contrary to popular belief, even though we spent the past 15 years down south and this is our first real winter in a good, long while, we aren’t crouched in a corner rocking back and forth and crying for our flip-flops.  No, we’re actually enjoying this winter vortex mess…well, as much as we can, I guess.

Blueberry Crumb Muffins

When life hands you blueberries, make muffins.  Isn’t that how the old saying goes?  It isn’t?  Well, it should.

Some mornings just call for muffins, and this was one of those mornings.  I had a pint of beautiful berries in my fridge that was staring at me every time I opened the door.  Usually, I throw some berries on my yogurt in the morning and call it a day, but this morning I didn’t want yogurt.  I wanted a buttery, crumb topped muffin bursting with fresh berries.

So, I made some.

Mocha Oatmeal Muffins

I got a new cookbook!!!  I know you’re as excited as I am, right??  Well, if you’re not, you should be because after looking through the book, I want to make every recipe in it.  And, if you’re nice, I’ll share with you.  See?  It’s a win-win situation!
