One dinner my kids can always agree on not pouting over is Chicken Parmesan.  Who doesn’t love Chicken Parmesan?  Breaded chicken, rich tomato sauce, pasta, and cheese?  It’s a carb lovers dream.  When I saw these little stuffed zucchini boats, though, filled with all of the flavors of our favorite chicken parm but in a slightly-less-calorie-packed frame, I decided to give it a whirl.  After all, this time of year, I’m saving all of my calorie splurges for cookies and party food.  Dinner needs to keep me satisfied, but in the month of many splurges, I really don’t need it to weigh me down.

I know what you’re thinking.  Stew in July?  Stew is a misleading name for this.  It’s light and summery, and chock full of crisp summer veggies, but consistency wise…yes, it’s right up there with a stew.  It’s a really tasty way to bring dinner to the table any night of the week, and it all comes together in one pan, so clean up is a breeze.  Pair it with a loaf of good, crusty bread and you have an easy, delicious meal in no time.

I am in love with the new store in town.

 If you live in the Indianapolis area, you’ve probably heard the buzz about the new Market District store that has opened up in Carmel at 11505 N. Illinois Street.  It’s really spectacular and, if I’m being completely honest, I’m a bit of an addict.  It’s only a few minutes from our house and I find myself there a lot lately.  (In fact, I’ve been there twice since Sunday.)  I was lucky enough be able to attend media events and tours on opening day, and with the behind-the-scenes knowledge I gained, I assure you that it really is a special place, full of amazing people who honestly, truly love their jobs.

You know it’s officially fall when I go and break out the butternut squash.  There’s just something innately autumn about it, and I don’t touch it until the time is right.  Well, the air is crisping up, the leaves are starting to change all around me, Christmas decorations are arriving prematurely in the stores, and the beauty of fall is here and now, so here you go.  One butternut squash dish coming right up!

This meal is, simply, summer in a bowl.

It’s light, and fresh, and so easy to throw together…because who wants to think when the weather is beautiful and you’d rather be hanging out by the pool?  This amazing summer meal can be put together in the time it takes for the kids to take showers after swimming so their hair doesn’t turn green.

I put a pot of water on the stove, and started heating it up to a boil.  As it was heating, I was busy prepping my fresh asparagus, slicing a red onion, and whisking together a quick, but super tasty, dressing of lemon juice, fresh dill, olive oil, salt, pepper, and a hefty dose of feta cheese.

What is it with the end of the school year?

It seems that every year, the end of the school calendar gets busier and busier.  This year is no exception.  We are scheduled to the max, every single one of us.  Between school projects, recitals, concerts, field trips, assignments, after-school activities, and deadlines, this Mama needs a glass of wine and a day by the pool.

Orzo Stuffed Peppers

I love when I come across a twist on an old family favorite.  I also love when I make it and it ends up being really good, and thus, a new family favorite.  This, happily enough, was one of those times.

My husband had mentioned last week that we hadn’t had stuffed peppers in a while, which is a less than subtle hint to me that he’d really appreciate having them for dinner one night.  I got to thinking about it and I couldn’t remember the last time I’d made stuffed peppers.  I think it might have been before our girls were born, which means he was more than right…it had been a long while.  It had been so long that I couldn’t remember where the recipe was that I had last used!  That led me on a search for a new stuffed pepper recipe to try.

One of the things I miss most about living in the Midwest is that chill in the air when fall first arrives.  I was downright giddy when I was in Michigan a couple of weeks ago and I stepped outside to find that the air was actually crisp.  It’s been so long since I’ve felt that, I’d almost forgotten how wonderful it is!  Down here in Georgia, we’re still waiting for that crisp, cool air and I’m beginning to think it may never come.  I know, I won’t be complaining when my family and friends are slammed with snow and ice come January, but there is something to be said for having four completely different seasons.  I miss fall the most.
