Orecchiette Carbonara with Brussels Sprouts

Orecchiette Carbonara with Brussels Sprouts - Chew Nibble Nosh 5

This is my new favorite comfort food meal for 2016.

It combines one of my favorite cozy Italian dishes, creamy Carbonara pasta, with my favorite winter veggie.  It comes together quickly, and simply, and just a few fresh, honest ingredients pack a whole lot of flavor.  In fact, the first time I made it, Avery (my youngest, and not my most adventurous eater…but she’s trying) commented that “Wow, the noodles give the brussels sprouts such great flavor!”  Ha!  Well, no, probably the other way around, but whatever works in her little head to get her to eat her veggies is fine by me.  That’s something she wouldn’t have done last winter.  My family enjoyed it so much that I’ve made it twice in the past few weeks, and we can’t get enough of it!

This, my friends, is EXACTLY the recipe we need for today.  This morning, at 5:00 AM, my phone pinged, telling me that my kids officially had their first two-hour weather delay of the season.  We only got a couple of inches of snow overnight, but it came down at just the right time to throw a kink in the bus schedule.  The kids were thrilled, I was excited to set my alarm for a little bit later, all was well with the world.  My husband texted me a while later and suggested I stay at home, if possible, because the road conditions stunk. OK, sounds good to me.

Penne with Roasted Tomatoes and Pancetta

Penne with Roasted Tomatoes and Pancetta - Chew Nibble NoshLittle did I know, that when I planned to make this for dinner, it would turn out to not only be delicious, but the perfect dinner for a night when the unexpected happened.

Just a couple of days before my car died, I remember thinking, “Wow, the battery in this car sure has lasted a long time.  I’m surprised I haven’t been stranded somewhere yet.”

You can guess what happened next, right?

Ribollita with Spaghetti

What a strange winter we’ve had so far!  I know, I know…I live in Georgia.  “Winter”, in the true sense of the word, doesn’t really exist here.  From what I’ve gathered, though, it’s been pretty calm all over.  That’s all well and good, but one of my favorite things about chilly winter nights is being able to make a big pot of soup for dinner.  Since we haven’t had many cold nights this year, my soup making has hit a bit of an inspiration road block.  Then…last weekend happened.  Last weekend was MISERABLE! Not snowy, winter weather, but rainy, gray and gross all weekend long.  Sunday called for soup.  No, it begged for soup.  So, I complied.
