Sorry, guys. I know I’ve been a little lax lately in sharing new recipes with you. Summer is TOUGH, though! I’d love to say our summer schedule is nothing but laziness, pool days, and endless time, but anyone with kids knows that it just isn’t. We’re having a great summer so far, but it’s keeping me on my toes, and unfortunately, not in the kitchen (or at the computer) as often as the obsessive-compulsive blogger part of me would like. Gosh, I love shrimp. You know that scene in Forrest Gump, where Bubba goes on and on, and on, about everything you can do with shrimp?
I never saw anything wrong with Bubba’s passion. If anything, it made me hungry.
Having lived in the South for a good number of years, I was used to being able to get fresh, wonderful, reasonably priced shrimp at every restaurant, and every market. Heck, sometimes the shrimp even came to me. When we lived in New Orleans, the wonderfully sweet man who was the custodian at the school I taught in would go out on his shrimp boat on the weekends and bring his delicious haul back in for me on Monday! Talk about spoiled! Being back in the landlocked Midwest has stifled our constant shrimpiness a bit, but I still try to cook it up often. This is my favorite time of year. The trees are blooming, the grass is green, the sun is shining, and we all would rather spend time outside than in. Springtime always seems like a wonderful gift, after a long, chilly winter, and this beautiful weather we’re having is no exception.

Warmer weather means better produce! This quick and delicious side dish is the perfect thing to throw together after a visit to the farmer’s market on a warm spring day, or even just a visit to the local grocery store.
I started by prepping all of my veggies. I chopped up a bright, yellow pepper, and some crisp green onions. I thinly sliced up a bright green zucchini, and then peeled and chunked up a small eggplant. Finally, I halved a pint of grape tomatoes

This recipe leaves me with mixed emotions. I’m thrilled I found it, because it’s delicious, but I’m irritated with myself because I’ve had the cookbook that it’s in for years and years, and never tried it until now. Shame on me!
This brisket was a huge hit with my family. It was the perfect thing on a night when we were running around until after 7 o’clock, and the fact that it was delicious just added to its awesomeness. The brisket cooks up amazingly tender and moist, and the gravy…oh, the gravy! I’m not a gravy person, and this one has me singing its praises. Such simple ingredients, but so tasty.
