When it comes to summer food, what do you look for?

I look for light, crisp, clean, fresh, and flavorful.  In the sticky summer heat, I don’t want food that will weigh me down.  I crave tastes that will refresh me, enlighten me, and that take advantage of the bounty that summer markets have to offer.

This salad is EXACTLY what I look for.

This quick and easy summer salad is the perfect summer picnic recipe go-to.  You can make it up ahead of time, and the longer it rests, the more the flavors mingle.  It was terrific the night we had it, alongside grilled steak, but even better the next day when I grabbed a bowlful for lunch.

With the 4th of July right around the corner, I’m pretty sure a lot of you are in BBQ menu planning mode. If you’re thinking of throwing a macaroni salad into the mix, this is your guy.  This salad is delicious, and fresh, and so easy to throw together.  There’s something about a good BLT that just makes people’s hearts sing.  So, turn that sandwich favorite into a scoopable summer salad, and you’ve got a winner!

Years of living down south taught me a lot of things.  One of those lessons learned was that there’s something special about a really good banana pudding.  When I came across this recipe, I knew I had to give it a try.  It seemed like a fun, simple twist on one of my favorites, and it’s the perfect thing to serve up to friends and family during the spring holiday season!

I know this seems a little weird, and I thought so too when I first saw the recipe, but it’s actually really, really tasty.

I was lucky enough to be handed this recipe years and years ago after devouring a generous scoop of it at a neighborhood pot luck.  It’s perfect pot luck food, and a perfect summer dish to share with friends.  It’s so cool, and crisp, but creamy and sweet, and just a little bit decadent.  It’s one of those “salads” that isn’t really a “salad”, but instead just a whole lot of yummy that won’t help you win any weight loss competitions.  You know what I’m talking about, right?  Like that Strawberry Pretzel “Salad”?  Salad, my foot.

Tuscan Grilled Chicken & Pepper Salad

This salad may go down in history as the prettiest salad I’ve ever made.  Even better?  It was delicious.  If you’re heading to a 4th of July party and have been asked to bring a dish, this is the perfect thing!  The ingredients all need to hang out in the bowl and marinate for a while before diving in, so you can put it together at home, hang out with your friends for a bit and then, just have the salad whenever you want.

Three Cheese Artichoke Bites

 It’s always nice to have a few recipes in your back pocket when you’re asked to bring a dish to share.  It’s even better when the dish is something a little out of the norm, so there won’t be twenty of them on the pot luck table.

This is one of those recipes.  These little savory artichoke bites are really easy to put together and they bake up beautifully.  I would compare them to a really hearty little crustless Quiche.  They are really tasty, and even better, super simple to whip up for a crowd.

The Perfect Winter Chopped Salad

I don’t know about you, but even though it’s the 1st of December, my schedule this month is already jam-packed.  It seems like every time we turn around, we have another party or function to go to…which is nice!  December is always nutty around here, but it’s fun, and we just roll with the crazy times.  It’s what makes the holidays extra special.

I came across this salad on Pinterest a while ago and I’ve made it a couple of times since for large groups.  It’s always a big hit, feeds a crowd and if you have a party or pot-luck to go to, it’s something a little different to add to the table.
