This is my new favorite comfort food meal for 2016.
It combines one of my favorite cozy Italian dishes, creamy Carbonara pasta, with my favorite winter veggie. It comes together quickly, and simply, and just a few fresh, honest ingredients pack a whole lot of flavor. In fact, the first time I made it, Avery (my youngest, and not my most adventurous eater…but she’s trying) commented that “Wow, the noodles give the brussels sprouts such great flavor!” Ha! Well, no, probably the other way around, but whatever works in her little head to get her to eat her veggies is fine by me. That’s something she wouldn’t have done last winter. And the beauty of it is, it’s so simple to throw together for a quick weeknight meal, but definitely impressive enough to serve to guests. The flavors are spectacular, it’s beautiful on the plate, and that maple-sage butter melting over the pork and apples? Holy smokes.
I started by making that very special butter. I combined some softened butter with some chopped, fresh sage, salt, pepper, and a good drizzle of maple syrup.

It’s official! The first new slow cooker dish of the fall season was a huge hit! This delicious variation on regular beef stew was just the perfect thing for dinner last night. I had one of those days where I was running around right up until dinner time. I needed something I could throw in the Crock Pot, and forget until dinner time. This was the amazing result. Zucchini noodles seem to be all the rage right now and spiralizers are moving from a fancy garnish tool to an everyday kitchen gadget. My friends at OXO asked me to try out their new Hand Held Spiralizer, and of course, I told them I’d love to give it a try!
What to make, though? As I was trying to figure out what to tackle first with my new gadget, I ran across an old recipe, written on a postcard, from my mother. I have no idea where this recipe came from. Probably from the pages of an old, yellowed cooking magazine or from one of her gazillion cookbooks (I come by my book hoarding tendencies honestly). It’s simply written on a notecard, and this delicious, blast-from-the-past spaghetti salad struck me as the perfect thing to modernize with a little spiralize. The Dog Days of Summer have finally hit us in Indiana. After a pretty cool and soggy start, now that it’s just about time to go back to school, the heat has finally kicked in. Not that I’m complaining. At all. I’m still in my “At one point, we lived in Louisiana and Georgia, this is nothing.” frame of mind. One of the reasons I started this blog was because friends and family often turned to me when they needed an idea for a recipe, or help with one they already had. It’s no secret that I’m a bit of a cookbook hoarder, and that I love to spend time in the kitchen. I’ve always loved trying out new recipes. I’m never afraid of being the recipe guinea pig, and Chew Nibble Nosh started out as a place where I could share my findings with my friends and family. It has since blossomed into much more than I ever imagined, which I am extremely humbled by, but at its heart, it is still a place where I share my guinea pig moments. With the 4th of July right around the corner, I’m pretty sure a lot of you are in BBQ menu planning mode. If you’re thinking of throwing a macaroni salad into the mix, this is your guy. This salad is delicious, and fresh, and so easy to throw together. There’s something about a good BLT that just makes people’s hearts sing. So, turn that sandwich favorite into a scoopable summer salad, and you’ve got a winner!

I’m not usually a big preparer of “copycat” meals, because in my experience, they’re never quite as good as the original. That said, I’ve had this one in my files for a while now, and I figured that I should give it a try. Why this one? Well, there was nothing scary involved (Why do so many copycat recipes include canned “cream of somethings” soups?), it’s ridiculously simple, and the Number One reason: I was pretty sure that even if it didn’t taste like the original, it would be tasty enough because I liked everything involved. Gosh, I love shrimp. You know that scene in Forrest Gump, where Bubba goes on and on, and on, about everything you can do with shrimp?
I never saw anything wrong with Bubba’s passion. If anything, it made me hungry.
Having lived in the South for a good number of years, I was used to being able to get fresh, wonderful, reasonably priced shrimp at every restaurant, and every market. Heck, sometimes the shrimp even came to me. When we lived in New Orleans, the wonderfully sweet man who was the custodian at the school I taught in would go out on his shrimp boat on the weekends and bring his delicious haul back in for me on Monday! Talk about spoiled! Being back in the landlocked Midwest has stifled our constant shrimpiness a bit, but I still try to cook it up often.
