For a while now, I’ve been wanting to recreate a scone I found at my favorite local coffee spot.  I stumbled across it quite by chance one day when I stopped in to grab a quick cup to go and my stomach happened to grumble at just the right time during the ordering process.  I looked to my left and saw a plate of beautiful, fresh, speckled scones, asked the barista what kind they were, and she replied “Lemon-Rosemary”.  And from there, a love affair was born.

Eating healthy in the New Year doesn’t mean you have to skimp on flavor.  I’m right there with the masses trying to get my slightly-larger-than-I’d-like behind into gear now that the most fattening time of the year is over.  I’m a firm believer in eating well as you’re eating less, though.  I’m much more likely to stick to a healthy eating plan if the food I’m eating along the way tastes good.  Feed me nothing but celery, and I’m likely to give up after a day or so…not to mention, I’ll be extremely grumpy, and nobody wants that.

I’ve made quite a few slow cooker meals over the years, and have found some pretty great ones (Chicken Tikka Masala and Chinese Pork being two of our favorites).  I’ve found some pretty awful ones too…which we will leave unnamed.  Sometimes, though, those great slow cooker meals take a few extra steps to make them that good.  I love when I run across one that consists of nothing more than throwing a bunch of good stuff in a slow cooker, walking away for a day, and coming home to a satisfying dinner.

One of the biggest advantages for us in moving to Indianapolis last summer, was that we’d be MUCH closer to family.  Before our move here, we were never closer than a ten-hour drive, anywhere we lived over the years.  We got to spend time with family a few times a year, and it seemed that every time I saw my nieces and nephews, they’d grown another foot.  Now, we get to see everyone much more often!  (Although, the kids still seem to be growing at an alarming rate…I’m talking to you, Connor.)  It’s really special, and we truly appreciate it after being away for so long.

Every once in a while, I get an urge to make Cornish Hens for dinner.  It doesn’t happen often, but when it does, I’m always surprised with how easy they are to work with.  I really should make them more often. They are wonderful for entertaining with, (I always get a lot of “Oooh!  Aren’t they cute?” when I entertain with them.) but recipes like this one, are simple enough to whip up on a busy weeknight for dinner.

Where has this year gone?  I truly can’t believe that it’s time for me to talk turkey already.  It seems like it was just yesterday that my mother and father in-law came to visit and I made this for them…but that was last year, before Thanksgiving.  Since we weren’t going to be able to have Thanksgiving Day dinner with them, I made a mini-Thanksgiving for us and had this turkey breast for the first time.  I’d never made a turkey breast before, always a whole turkey, and if I’m being honest, I wasn’t expecting much.

It’s beginning to look a lot like cookout season!  I love sunny weekends where we can get together with family and friends, enjoy each other’s company while the kids play outside, and enjoy a great meal together.  There’s nothing better.

Love is in the air! Although, it’s really hard for me to believe that it’s almost Valentine’s Day.  I think my holiday radar is a little bit off lately.   I’m going to blame my holiday ineptness on the stores around me feeling the need to fill up with Valentine goodies on December 26th!  The stuff has been in the stores for so long that I’ve grown to ignore it, and now, here we are…almost to the actual occasion!  I’m fully prepared for them to roll out the 4th of July paraphernalia on February 15th.

Are you getting ready for a busy weekend?  Quite thankfully, I’m not!  I can’t remember the last time we had a weekend with absolutely NOTHING going on.  I’m going to savor it, every little second. (In other words, don’t call my house tomorrow in the early morning hours because I hope to be sleeping.)
