Sometimes, a recipe comes along and stops us all in our tracks.  This is one of those recipes.  I grabbed this recipe from my Skinnytaste cookbook, whipped it up for dinner, and my husband couldn’t stop talking about it.  There are a lot of slow-cooker-taco-filling recipes out there, but this one holds a special place in our hearts, and now, our recipe box.  It’s really, really tasty, and when you feel like you need to lighten up, and freshen up, your fall meal routine, this is a great place to start.

The Dog Days of Summer have finally hit us in Indiana.  After a pretty cool and soggy start, now that it’s just about time to go back to school, the heat has finally kicked in. Not that I’m complaining.  At all.  I’m still in my “At one point, we lived in Louisiana and Georgia, this is nothing.” frame of mind.  It’s just that finally, after almost three months of weather weirdness, it feels like summer.

I always underestimate the power of a baked potato at dinner.  We don’t have them often, but when we do, the kids are thrilled, and we make it through dinner moan free.  If I were smart, we’d have baked potatoes every night.  But, I’m not often that smart.

These Mexi-topped baked potatoes are a deliciously filling alternative to your typical weeknight entree.  Serve them alongside a salad and you’ve got yourself a simple weeknight dinner.

Ooooh!  It’s Spring! I think it’s really here this time!  The birds are chirping, the grass is greening up, and the sun is warm and delicious, and we’re all ready to soak it up.

Warmer days mean lighter, super fresh meals to me, and this meal was the perfect start to our first warm week in a long time.

Crock Pot Mexican Chicken - Chew Nibble NoshThis is one of those “It’s so Easy, it’s Almost Embarrassing”  recipes.  Since we all know that it takes a lot to embarrass me, I figured I’d go ahead and share it.  A friend of mine passed this recipe on to me years ago, and it’s been in a pretty steady rotation at my house ever since.  Crock Pot dinners don’t get much simpler, so it’s perfect for a crazy busy run-the-kids-everywhere kind of day.

All you need is a can of black beans, a can of corn, a block of cream cheese, a jar of salsa, and about 1 1/2 pounds of boneless, skinless chicken.

I don’t know about you, but one of my downfalls when we go out to a Mexican restaurant is that freebie basket of chips and salsa they plop down on the table as soon as we arrive.  Pair that with some guacamole and a margarita, and I could easily down my week’s worth of calories in one sitting.  Those chips are dangerous…dangerously addictive.  There’s just something about munchies.  I’ve learned that when the basket hits the table, I’m better off just not touching it.  That way, I’m actually still hungry when dinner arrives.  Not grabbing a chip (or fifty) is kind of a bummer, but I usually feel better about my choices by the end of the meal.

Tomorrow morning, the girls and I are heading home after a two week long trip up to the Midwest.  Namely, Michigan and Indiana.  We were hoping to escape the heat in Georgia, and that worked for the first half of our trip, but wow…did it get hot!  Despite the heat wave, we’ve had a wonderful visit.

We packed a lot of activity into those two weeks, but best of all, we got to spend a lot of time with family and friends that we don’t get to see often enough.

It’s been a fantastic trip.
