Quick Korean Beef

Quick Korean Beef - Chew Nibble Nosh

I know, I know.  My Korean friends are probably rolling their eyes and looking at this like I’m crazy.  But, hear me out.

May is what’s CRAZY.  I have yet to talk to one parent of school aged children this month who isn’t completely bogged down with school projects, after school activities, end of the year recitals and concerts, class trips, sporting events, etc. etc. etc.  May is just nuts.

Sesame Roasted Sugar Snap Peas

Sesame Roasted Sugar Snap Peas - Chew Nibble Nosh

Earlier this week, I posted a delicious easy recipe for Slow Cooker Pork Tenderloin with a sweet and tangy Orange-Hoisin Glaze.  I mentioned then that I served it alongside some amazing little roasted snap peas.  I figured that today, it would just make sense to share that recipe as well!

Sesame Noodles with Shredded Chicken

Sesame Noodles with Shredded Chicken - Chew Nibble Nosh

I distinctly remember the first time I had Sesame Noodles in a Chinese restaurant.  I was out to dinner with some girlfriends when we lived in Virginia, and as we were looking over the menu, my friend Nicole said, “Oooh, I need to order some Sesame Noodles.”  I asked her what they were, because I’d never heard of them (despite having eaten in Chinese restaurants all my life) and she said, “The noodles are cold and they have this peanut butter-sesame sauce on them.  They’re delicious.”  Having never had a peanut sauce on anything (I know!  Had I been living under a rock?), I thought that sounded a little weird, but Nicole said I could try a bite when they arrived.

Five-Spice Glazed Salmon with Roasted Sesame Green Beans

It’s so nice when things work out just the way they are supposed to, isn’t it?  It seems like our lives have been in warp speed lately between holiday prep, trips, school, after-school activity overload, homework, projects, meetings, deadlines, etc. etc…  The few months that the girls have been back in school have been a whirlwind, and the next few months, as we prepare to move, are going to be just as crazy, if not crazier.

So, it’s always nice when I’ve planned something simple, and it works out to actually be…simple.

Sesame Salmon with Cucumber Salad

My goodness, this summer flew by.  I know it’s just the beginning of August, but my girls start school next week!  We packed a lot into this summer, more than we’ve ever packed before.  We’ve been nonstop busy with camps and vacations, day trips and playdates.  I really can’t complain.  It’s been a lot of fun!

I love to have friends over for dinner in the summertime.  Everyone is pretty laid back, our schedules are empty, we just kick back, relax and enjoy each other’s company with some good food.  This summer, we were so busy that I really didn’t get to entertain as much as I like.  There were no big summer cookouts, because everyone was as busy as I was.  So, Friends, I apologize.  I’ll make it up to you.

Quick Asian Steak Kebabs with Broccoli Slaw

It’s Friday!  YAY!!!!!!

Boy, has this been a week!

After today, we only have one more week of school down here.  As anyone with kids in school knows, the last couple of weeks are CRAZY!  I’ve been so busy that my Moment of Zen this week was being able to sit down for a couple of hours while my car was being serviced at the dealership.  Kind of pathetic, eh?

Thankfully, we were all able to settle in together for dinner last night. I was short on time, but tried out this new recipe because it promised dinner in a flash.  It really was quick and easy, plus the fact that it tasted so good didn’t hurt either!
