If you’re an avid reader of this blog, you know that I love a good meal that I can make in my slow cooker. In fact, Fall is my favorite time of year to put one to good use. Days are shorter, kids are busier, and the convenience of having dinner ready to go when we walk in the door after all of our running around makes life just a little bit easier. So, when Hamilton Beach contacted me and asked if I’d like to try their new Programmable Stay or Go 6 Quart Slow Cooker, of course I said yes!
It’s official! The first new slow cooker dish of the fall season was a huge hit! This delicious variation on regular beef stew was just the perfect thing for dinner last night. I had one of those days where I was running around right up until dinner time. I needed something I could throw in the Crock Pot, and forget until dinner time. This was the amazing result.
It’s almost time for Cinco de Mayo! Yay! But, Cinco de Mayo falls on a Tuesday this year. Boo.
Mid-week celebrations can definitely throw a wrench in your plans, especially when those plans include eating and drinking. Luckily, you can celebrate with this simple, healthy, family friendly, weeknight-friendly, Cinco de Mayo-friendly soup!
I love tortilla soup, and one of my favorite soup recipes of all time can be found here. I do love that recipe, but when I came across this one, I was struck by how fresh and light it looked. I’m all about fresh and light these days. I loved that it was chock full of veggies, and super colorful. It looked like it could balance out a margarita or two and a piece of Tres Leches cake quite well. (Everything in moderation, right? It is Cinco de Mayo, after all.)
You can usually tell how simplistic a meal is here on Chew Nibble Nosh by how many pictures there are of the process. This meal was so easy to throw together, that I only have three pictures. So, if you’re looking for quick and easy, and something you can just throw into the Crock Pot and walk away from, this is your meal.
It’s no secret that I love a good short rib, and I love sweet, salty Korean BBQ as well. Throw those two entities together, and I’m a happy camper. After a few hours in the slow cooker, these short ribs are melt-in-your-mouth tender. I served them alongside some steamed rice and broccoli, and they made for a delicious easy dinner for a busy night.
I just love it when simple and healthy come together just right to create the perfect meal for a busy night. This is one of those recipes. It couldn’t be simpler, even for a slow cooker recipe, and is perfect for those nights when you’re playing taxi driver all night long and have to catch a meal somewhere in between trips.
Traditional succotash is a stewed combination of lima beans, corn, and tomatoes. It’s a cozy, home-cooking type dish, and is often served as a side. This version features more Mediterranean flavors, and creamy white beans in place of the lima beans. And when it’s served over some couscous, it makes for a hearty, healthy meal.

This is an Italian inspired spin on traditional pot roast that my family really enjoyed, and the fact that it is a simple slow cooker meal helped me to enjoy it even more.

Do you use your slow cooker in the summer? Not every slow cooker meal has to be a rich, wintry stew or chili. Summer time is actually the best time of year to bring your slow cooker to life! Not turning on the stove or the oven means less heat in your kitchen. And, when you’re chasing little ones around the pool during the day or carting kids from activity to activity, or camp to camp, having dinner ready to go and practically just waiting for you to dive in can make life a whole lot happier!

It was Monday morning, and I was planning out my busy day and my busier after school shuttle bus schedule, when I realized that I needed to figure out what we were going to squeeze in for dinner. I had some pork tenderloin on hand, and I started Googling to find something I could whip up with ingredients already stocked in my pantry and fridge, and possibly utilize my slow cooker, and this is what I ran across. When dinner rolled around, my family was pretty excited that the stars aligned in this way. It was delicious, and super simple to put together. The original recipe comes from a healthy meal planning site called The Diabetic Skillet.
One of the biggest advantages for us in moving to Indianapolis last summer, was that we’d be MUCH closer to family. Before our move here, we were never closer than a ten-hour drive, anywhere we lived over the years. We got to spend time with family a few times a year, and it seemed that every time I saw my nieces and nephews, they’d grown another foot. Now, we get to see everyone much more often! (Although, the kids still seem to be growing at an alarming rate…I’m talking to you, Connor.) It’s really special, and we truly appreciate it after being away for so long.
