That’s so nice of you. But, wait. It dices?”

Chicken with Quinoa and Vegetables

Chicken with Quinoa and Vegetables - Chew Nibble Nosh

THIS WAS SO GOOD.

Ok, I got that out there.  I was trying to think about what I could say about this dish to draw you guys in, and that’s what I came up with.  (It’s one of those days…)

This simple, healthy mash-up of chicken, veggies, and quinoa was the perfect weeknight dinner for us the other night.  We all enjoyed it, and it will definitely be thrown into the regular dinner rotation around here.  I couldn’t ask for more from a dinner, really.  It’s simple, fresh, healthy, filling, and my kids gobbled it up.  Mom – 1, Picky People – 0.

Sweet Corn, Tomato & Pesto Pizza

Sweet Corn, Tomato and Pesto Pizza - Chew Nibble Nosh

You guys.  This pizza…

Wow.

This Sweet Corn, Tomato & Pesto pizza is everything wonderful about summer…on a crust.
It’s crisp, fresh sweet corn and bright summer tomatoes, viibrant fresh basil, and zesty garden fresh pesto.  It’s packed with flavor, ridiculously easy to throw together, and on the dinner table (…lunch table, snack table, coffee table. The pizza’s not picky.) in virtually no time at all. It’s just perfect.

I could eat it every day and probably be pretty happy.

Have I pumped it up enough?

Mediterranean Chicken Skillet with Zucchini, Chickpeas, Olives and Tomatoes

Mediterranean Chicken Skillet with Zucchini, Chickpeas, Olives and Tomatoes - Chew Nibble Nosh

Fast, fresh, and healthy.

That’s exactly what this meal is, and I love that something so colorful and fresh can come together this quickly and taste so darn good.

I’d made this meal before, and we’d really enjoyed it, so I decided to make it again and actually remember to take pictures (#foodbloggerproblems) so that I could share it with you.  As I was getting my ingredients together, I quickly realised that I was in a bit of a pickle.

Slow Cooker Italian Pork Chops with Zucchini and Tomatoes

Slow Cooker Italian Pork Chops with Zucchini and Tomatoes - Chew Nibble Nosh

Thursday nights have become increasingly busy around here, so I’ve now dubbed them Slow Cooker Thursdays.  There’s no way I’m going to be able to cook a dinner in between shuttle stops, so I’m thankful I have a good number of tasty slow cooker meals in my back pocket.  This one can now be added to the list.

I honestly can’t remember a time where I’ve cooked whole, bone-in pork chops in the slow cooker, and I was pretty happy with how they turned out.  The pork was fall-off-the-bone tender, and had a ton of flavor from a delicious herb-garlic rub.  It was topped with tomatoes, zucchini, and a speedy quick gravy that I made from the leftover juices after cooking.

Cauliflower Gratin with Tomatoes and Feta

In this house, the side dishes generally play second fiddle to the entrée.  I’m usually spending so much time with the main part of the meal that the side dishes are pretty simple, or sometimes, even an afterthought.  THIS side dish, however, takes center stage, and it was absolutely the most exciting thing we had at dinner that night.

I am in love with the new store in town.

If you live in the Indianapolis area, you’ve probably heard the buzz about the new Market District store that has opened up in Carmel at 11505 N. Illinois Street.  It’s really spectacular and, if I’m being completely honest, I’m a bit of an addict.  It’s only a few minutes from our house and I find myself there a lot lately.  (In fact, I’ve been there twice since Sunday.)  I was lucky enough be able to attend media events and tours on opening day, and with the behind-the-scenes knowledge I gained, I assure you that it really is a special place, full of amazing people who honestly, truly love their jobs.

Chilled Summer Veggie Salad

Chilled Summer Veggie Salad - Chew Nibble Nosh 4

When it comes to summer food, what do you look for?

I look for light, crisp, clean, fresh, and flavorful.  In the sticky summer heat, I don’t want food that will weigh me down.  I crave tastes that will refresh me, enlighten me, and that take advantage of the bounty that summer markets have to offer.

This salad is EXACTLY what I look for.

This quick and easy summer salad is the perfect summer picnic recipe go-to.  You can make it up ahead of time, and the longer it rests, the more the flavors mingle.  It was terrific the night we had it, alongside grilled steak, but even better the next day when I grabbed a bowlful for lunch.

Grilled Steak with Chimichurri Sauce – Red Gold Summer Grilling Giveaway

Grilled Steak with Chimichurri Sauce - Chew Nibble Nosh.

Summertime means grilling time, and my friends at Red Gold Tomatoes have come up with a giveaway that I’m sure will make many grilling aficionados pretty darn excited.  From now until July 22, Red Gold will be giving away a large Big Green Egg each week!  A Big Green Egg!

That’s huge!

I can’t begin to tell you how an Egg will change the way you grill.  We’ve had one for the past couple of years, and trust me when I say that it does some pretty spectacular things for grilled food.  My husband’s eyes light up every time I ask him to grill something, and our eyes light up every time he brings in dinner!

Quinoa Tabbouleh

Quinoa Tabbouleh - Chew Nibble Nosh.I think I found my new favorite salad for spring and summer.  I’ve always been a fan of classic, light, Middle-Eastern flavors like lemon, olive oil, garlic, and herbs.  So, keeping that in mind, I’ve always loved Tabbouleh.  The salad is traditionally made with bulger, tomatoes, olive oil, lemon, mint, and lots of parsley.  I’ve even had it with couscous before, but I loved the idea of mixing it with protein packed quinoa and crisp, cool, cucumbers.
