Mini No-Bake Blueberry Cheesecakes

Mini No-Bake Blueberry Cheesecakes - Chew Nibble Nosh

Outdoor concerts are one of my favorite ways to spend an evening in the summer. We’re very lucky to be surrounded by many different opportunities for musical evenings where we live, and we were excited when some friends of ours asked if we’d like to join them for a night with the Indianapolis Symphony Orchestra under the stars last week.

Just a few short days ago, the weather was brutally hot around these parts, as it was in most of the country. So, trying to figure out what to bring for our symphony picnic proved tricky.  I wanted food that would keep us cool, that wouldn’t weigh us down in the heat. I also needed food that wouldn’t melt, and that was easily transportable in a small rolling cooler.

Chocolate Pots de Creme with Marshmallow Whipped Cream

Doesn’t that look like something you’d want to curl up with after a long day?

Pot de Creme is just one of those desserts that, when offered, I can’t resist.  Have you ever had one?  If so, you know what I’m saying.  A Pot de Creme is actually just a really, really creamy, tasty, wonderful custard pudding. It’s rich and velvety smooth, and a little goes a long way.  If you’re ever needing a chocolate fix…a really deep, wonderful, dreamy chocolate fix, this version is the recipe for you.

Chocolate Peanut Butter Crunch Ice Cream Cake

Three ingredients.

That’s all is takes to make this incredibly fun, crispy, crunchy, chocolatey, cool dessert.  This ice cream cake is so easy to put together, and it knocked the socks off of my family at a cookout over the weekend.  My husband even mentioned after dessert that he’d like me to make this cake for his birthday…which isn’t until next April.

Cool and Creamy Grape Salad

Cool and Creamy Grape Salad - Chew Nibble Nosh

Just trust me.

I know this seems a little weird, and I thought so too when I first saw the recipe, but it’s actually really, really tasty.

I was lucky enough to be handed this recipe years and years ago after devouring a generous scoop of it at a neighborhood pot luck.  It’s perfect pot luck food, and a perfect summer dish to share with friends.  It’s so cool, and crisp, but creamy and sweet, and just a little bit decadent.  It’s one of those “salads” that isn’t really a “salad”, but instead just a whole lot of yummy that won’t help you win any weight loss competitions.  You know what I’m talking about, right?  Like that Strawberry Pretzel “Salad”?  Salad, my foot.

Vanilla Cider Pork with Pears

Well, March certainly has roared in like a lion this year.  Blizzards, thunderstorms, tornadoes….ugh.  I’m so ready to put wintery food behind me for the year, but when it continues to be wet and blustery, I just want warm and cozy at dinner.

Dinners don’t get much cozier than this.  Tender pork tenderloin, browned with juicy, sweet pears and then finished off in a vanilla cider cream sauce?  Yes, please.

Spring Sugared Marshmallows

I look at the calendar on my wall and I know that it’s April, but I’m having a really hard time believing that it’s already time for Easter. Wasn’t it just Christmas? I feel like I’ve been in some department store time warp and they’ve thrown the holiday at me way too early.
