Simple Skillet Lasagna


I love lasagna, but it’s not something I make often.  It can be time consuming, depending on the recipe, and unless I have a large chunk of time to play around with in the kitchen (which doesn’t happen often), it’s just not on my recipe radar.

This version, however, changed all of that.

This Skillet Lasagna is so good that two days later, I’m still thinking about how good it was.  The more I ate, the more I enjoyed it, and I can safely say that THIS lasagna will be making multiple appearances at our dinner table.  It’s simple, perfect, delicious comfort food, and just the right thing as the air starts to crisp up and the leaves begin to turn.

I figured we needed a breath of Spring air over here.

My goodness, it’s cold!  And while it’s crazy cold here, I know that it’s even crazier colder in a lot of places.  Yes, it’s winter.  We get it.  We aren’t complaining.  Contrary to popular belief, even though we spent the past 15 years down south and this is our first real winter in a good, long while, we aren’t crouched in a corner rocking back and forth and crying for our flip-flops.  No, we’re actually enjoying this winter vortex mess…well, as much as we can, I guess.

I’m guessing a lot of other people do too, and that’s how it got its name.  It certainly is yummy, and it’s a pretty impressive dessert for being so simple to put together.  It’s a great dessert for a crowd, or pot luck, because you can make it ahead of time and it actually tastes better the longer you let it hang out in the fridge!

Tomato-Basil Tart - Chew Nibble NoshSpring has sprung (finally), and believe it or not, summer is right around the corner!  I’ll fully admit that this time of year, every year, I get a case of the “Ohmigosh, I have to be in a swim suit, in public, in just a few short weeks.” heebie jeebies.  Thankfully, as the weather warms up, I feel like eating lighter anyway.  Hopefully, shedding the heavier, comfort food that winter brings will help me shed a few pounds as well.

That said, nobody wants to starve.

Pumpkin and Ricotta Stuffed Shells

I love trying new recipes.  I have more cookbooks than I can count, and I am constantly scouring the internet for great new finds.  I really enjoy throwing something new into our food lives at least once a week.  I wish I had the oomph to be as devoted to new recipes as my friend Jen.  She hasn’t repeated a dinner recipe in 16+ years!  Truly amazing.  We do have some favorites, though, and if I never served certain things again, I think my family might cry. My friends know that I love making new things and they often pass recipes my way.  This was the case with the recipe that I’m featuring today.  My friend, Tracie, tore this out of a magazine for me because she thought it might be something I’d like to make.  She was right.  Thankfully, it was an easy recipe for me to split in half.  Despite our crazy schedule this week, I wanted to share some of this with my friend who was nice enough to think of me as she flipped through her magazine.
