Sometimes, things just don’t go your way.  Like, when you’re planning on asking your husband to grill kebabs for dinner, so you have everything prepped and ready in the fridge for dinner time, and then your husband calls and says he has a last minute dinner meeting, and then it starts to pour.

When life hands you a dinner meeting and a sudden rainstorm, use your oven!  That was the lesson learned that day. These little guys are super easy to put together, and they were absolutely delicious.  A few minutes under the broiler, and my soggy-husbandless-grill dilemma was solved.

You know it’s officially fall when I go and break out the butternut squash.  There’s just something innately autumn about it, and I don’t touch it until the time is right.  Well, the air is crisping up, the leaves are starting to change all around me, Christmas decorations are arriving prematurely in the stores, and the beauty of fall is here and now, so here you go.  One butternut squash dish coming right up!

What do we do when we buy a bunch of raspberries because they’re on sale?  We make pie!  I’ve had this recipe in my back pocket for a while now, and have been meaning to make it, but grabbing some beautiful berries at a beautiful price sealed the deal.  And, the fact that this pie is so easy to throw together made it taste even sweeter.

I started by making an Oreo cookie crust.  I know, right?  Not a bad way to start things off.

Yep.  This was good.  A little too good, but that isn’t surprising when you see what goes into it.  If you’re looking for a way to use up some more of the summer zucchini from your garden, this recipe is for you.  Or, if you’re like me and don’t have a summer garden, but you have a grocery store or farmers market that sells zucchini grown by people who are much better gardeners than you are, well…then it’s for you too.

It’s official!  The first new slow cooker dish of the fall season was a huge hit!  This delicious variation on regular beef stew was just the perfect thing for dinner last night.  I had one of those days where I was running around right up until dinner time.  I needed something I could throw in the Crock Pot, and forget until dinner time.  This was the amazing result.

And just like that, it’s September and I’m back to playing extracurricular taxi driver after school. Wow, that was fast.

Getting back into the swing of things always takes some adjustment.  We’re all going through that transition now, and one of the ways I can help navigate the crazy is with some simple meals to throw together come dinnertime.  Plus, if I can work it so clean up time is minimal, that’s a huge bonus.

Zucchini noodles seem to be all the rage right now and spiralizers are moving from a fancy garnish tool to an everyday kitchen gadget. My friends at OXO asked me to try out their new Hand Held Spiralizer, and of course, I told them I’d love to give it a try!

What to make, though?  As I was trying to figure out what to tackle first with my new gadget, I ran across an old recipe, written on a postcard, from my mother.  I have no idea where this recipe came from.  Probably from the pages of an old, yellowed cooking magazine or from one of her gazillion cookbooks (I come by my book hoarding tendencies honestly).  It’s simply written on a notecard, and this delicious, blast-from-the-past spaghetti salad struck me as the perfect thing to modernize with a little spiralize.

This is a great recipe to have on hand when you really want to go out to your favorite Indian restaurant for dinner, or grab carry-out from them, but it’s too darn cold to go and you’d rather just stay home, put on your pajamas and slippers, and stay warm.

It’s really a simple dish to throw together, and for you curry naysayers out there…my kids even liked this.  It is warm and cozy, with just enough heat to put us in a warmer frame of mind on a cold, winter night.

Happy Fall!  It’s official…we’ve moved on.  Summer is over, leaves are changing, the air is crisp, everything is covered in pumpkin spice…I love it.  Fall is my favorite time of year.

As the temperature starts to dip, it’s nice to have some cozy, comfy, family pleasing meals in your back pocket. This one is delicious, and my family loved ringing in the new season with a new fall favorite.

I started by cutting up a butternut squash into one-inch chunks and getting them ready to roast.  I lined a cookie sheet with foil, sprayed it with nonstick spray, laid out the squash, gave them a quick spray, and sprinkled them with a mixture of dried rosemary, salt, and pepper.

I use my slow cooker a lot on busy nights during the school year, but I’ve found that it can also be a life saver during the hot, summer months when the last thing you want to do is stand over a hot stove or heat up the whole house with a hot oven.  That said, a lot of slow cooker meals are wintery…stews, soups, heavy, heavy, heavy.   I’m always on the lookout for something different to try in my Crock Pot, and when I ran across this sandwich recipe, it seemed like it would be light enough make a great summer dinner.
