Oooooh, these cookies.

Chocolate and marshmallow is one of my favorite combinations, but I fully underestimated how delicious these cookies would be.  I saw them on Pinterest, thought they were clever and fun, and then I took a bite, and fell in love.

These cookies are fudgy, and chewy, rich, and delicious.  Warm, out of the oven, they are melty and gooey, like a molten lava cake.  As we ate them over the next few days, they were still chewy, and decadent…and the marshmallow stays puffy and light.  That was, honestly, my biggest worry.  I wondered if the marshmallow would dry out and lose its bounce.  Nope.  Still amazingly puffy a few days out.

See this recipe?  I’ve wanted to share this with you all week.  Over the past year, I’ve figured out that this is what happens when you’re a food blogger.  You get excited about silly things like “sharing pie”, but have to think about timing.  Friday seemed like a fun day, and a good day for a fun pie, so here we are.

We had my friend over on Sunday night for a little birthday celebration dinner, and this was our dessert.  It’s one of those desserts that had all of us so busy “Mmmming” and “Ooooh, wowing” at the table that we didn’t have time for meaningful conversation.

When my kids are home in the summer time, and it’s a kazillion degrees outside, we spend a good deal of time in the kitchen making “fun food”.  Generally, there’s not a whole lot of nutritional value in “fun food”, but that’s OK.  It’s for fun, right?  This is a recipe that I came across online last year and it has become a summer favorite.  Last summer, I should have bought stock in marshmallows, I made so many batches!

The finished product is deliciously chewy, sweet, and tangy, but above all, fun!  Plus, from an adult standpoint, it’s pretty cute.
