I love lasagna, but it’s not something I make often. It can be time consuming, depending on the recipe, and unless I have a large chunk of time to play around with in the kitchen (which doesn’t happen often), it’s just not on my recipe radar.
This version, however, changed all of that.
This Skillet Lasagna is so good that two days later, I’m still thinking about how good it was. The more I ate, the more I enjoyed it, and I can safely say that THIS lasagna will be making multiple appearances at our dinner table. Sometimes, even though the sun is shining, the birds are singing, and you break a sweat when you walk outside, you just need some good, old-fashioned comfort food. This was the case for me this past week, as my allergies have been giving me a serious run for my money. I heard on the news that they are calling this year’s pollen forecast a “POLLEN TSUNAMI”. It’s official, everything is way too dramatic.

It seemed to take a while, but spring has officially sprung here in Indianapolis. We returned home from our Spring Break vacation to find that the grass was a whole lot greener, the birds were a whole lot chirpier, and the trees were starting to bud. Aaaaahhhhh…it feels good!

I just love it when simple and healthy come together just right to create the perfect meal for a busy night. This is one of those recipes. It couldn’t be simpler, even for a slow cooker recipe, and is perfect for those nights when you’re playing taxi driver all night long and have to catch a meal somewhere in between trips.
Traditional succotash is a stewed combination of lima beans, corn, and tomatoes. It’s a cozy, home-cooking type dish, and is often served as a side. Yep. We have officially reached what I like to refer to as the “Pot Roast Weather” time of year. When there’s a chill in the air, and my toes are cold, there’s nothing better than a cozy, warm plate of comfort food to make the world right again.
