Outdoor concerts are one of my favorite ways to spend an evening in the summer. We’re very lucky to be surrounded by many different opportunities for musical evenings where we live, and we were excited when some friends of ours asked if we’d like to join them for a night with the Indianapolis Symphony Orchestra under the stars last week.

Just a few short days ago, the weather was brutally hot around these parts, as it was in most of the country. So, trying to figure out what to bring for our symphony picnic proved tricky.  I wanted food that would keep us cool, that wouldn’t weigh us down in the heat. I also needed food that wouldn’t melt, and that was easily transportable in a small rolling cooler.

What do we do when we buy a bunch of raspberries because they’re on sale?  We make pie!  I’ve had this recipe in my back pocket for a while now, and have been meaning to make it, but grabbing some beautiful berries at a beautiful price sealed the deal.  And, the fact that this pie is so easy to throw together made it taste even sweeter.

I started by making an Oreo cookie crust.  I know, right?  Not a bad way to start things off.

Looking for something sweet for your sweetheart this Valentine’s Day?  These brownies are not only beautifully festive, but they are also unbelievably tasty.

I have this amazing neighbor.  She’s a wonderful friend, wonderful mom, and also a wonderful baker.  She bakes up the most delicious treats, and we’ve managed to be lucky enough to be her guinea pigs on more than one occasion.  A couple of weeks ago, she texted me asking if it was OK to send down some Red Velvet Cheesecake Brownies to try.  (Did she really need to ask?  Heck yes!  Send them down!) She wanted to know if they were good enough to send in for the teachers.  We were her taste testers.  Tough job, eh?

I love a good challenge, and when the good people at Driscoll’s Berries asked me if I’d like to participate in their Muffin Madness promotion for the month of March, I couldn’t resist!  All this month, Driscoll’s will be featuring mouth-watering berry muffin recipes on their website.  You’ve heard of March Madness, right?  Well, Muffin Madness is a whole lot tastier!

They have some amazing recipes on their site, but I decided to try to concoct my own variation.  My all-time favorite berries are sweet, tart raspberries.  My favorite muffins are those yummy pumpkin cream cheese muffins you see in, virtually, every coffee shop and cafe during the fall months.  I thought a raspberry cheesecake muffin sounded like the perfect Spring variation to try.

This year, when I thought of St. Patrick’s Day desserts, visions of chocolate and Irish Cream danced in my head.  I quickly hit the Internet, to see if I could find something, and was greeted with an abundance of Irish Cream desserts.  Some of them were pretty intense.  I chose this one because, well, it just sounded really good.  I don’t mind booze in a dessert, but I don’t like “boozy desserts”.  Does that make sense?  This cheesecake seemed like the perfect combination of all things Irish Creamy and chocolatey.  I knew I had to give it a try.

Game Day Week Recipe #5: Caramel-Coconut-Pecan Cheesecake Bars

As I was trying to come up with my Game Day menu for this week, I found myself flipping through one of my favorite cookbooks.  I was looking for an appetizer, but flipped to the wrong part of the book and landed in the dessert section.  There is was, staring right at me…Caramel-Coconut-Pecan Cheesecake Bars.  I looked at the recipe, it looked at me.  It said, “Christine, I think you should make me.”  Never one to argue with a talking recipe, I replied, “Yes.  I think I should.”

And so I did.
