Apple Broccoli Slaw

This post is for my husband.  I made this broccoli slaw for a Halloween party we went to last weekend.  Ever since then, I’ve been hearing at least once a day, “So, when are you going to post that slaw?”  Last night, after I made dinner (see last night’s post here) and said I was heading to the computer to post on the blog, the first thing out of this mouth was, “You know, you haven’t blogged about that slaw yet.”  So, this is for Aaron.  I hope he approves and that it’s been worth the wait!

Saturday was a busy day for us and I needed a quick and easy, tasty side dish to take to a Halloween party.  I had a window of a couple of hours between activities, so I chose this broccoli slaw recipe out of one of my favorite Southern Living cookbooks.  The recipe takes about ten minutes to put together, but then it has to chill for a while, so it was perfect for our busy day.

To start, you’ll need just a few simple ingredients.  This is apple season, so grab two beautiful Gala apples, a couple of bags of broccoli slaw and some golden raisins.  I know, I know.  I just posted recently about my aversion to raisins (see that recipe here), but I can deal with them in a salad-type situation.  I can’t take them baked or as a snack. That’s just gross. But if they are mixed up in a salad, I’m good to go.

Before assembling the salad, you’ll need to make a quick vinegar based dressing.  This slaw is great for outdoor parties or picnics because it’s not mayonnaise based.  It won’t turn iffy after some time out of the fridge.  I knew we’d be outside for a few hours at the party, so “safe to eat” seemed like a good option.  The dressing comes together on the stove top in about 5 minutes.

The dressing needs to cool a bit before being mixed up with the fruits and veggies, so while it cooled, I chopped up my apples and got everything ready to go.  You don’t even need to peel the apples!  That’s how easy this is!

Once the dressing had cooled, I tossed it with the salad.  Then, it just had to hang out in the refrigerator for a couple of hours.  That’s it!

We had a great time at the party and I was happy to have an empty bowl to bring home.  It was a hit!  Although, given my husband’s excitement over this, he may be the one who had eaten it all!

Apple Broccoli Slaw

Ingredients
  • 1/2 cup apple cider vinegar
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 1/2 tsp. mustard seeds
  • 3 Tbsp. vegetable oil
  • 16 oz. packaged broccoli slaw (about a bag and a half of what I could find at the store)
  • 2 Gala apples, chopped
  • 1/2 cup golden raisins
Instructions
  1. Combine first 4 ingredients in a small saucepan. Bring the dressing to a boil and cook until sugar dissolves, about 1 minute. Remove from the heat. Cool. Gradually whisk in the vegetable oil.
  2. Combine the broccoli slaw, apple and raisins in a large bowl. Add the vinaigrette and toss well. Cover and chill for 2-3 hours.
  3. ENJOY!
