I love the holidays for many reasons, but I do truly enjoy locking myself in the kitchen and baking up a storm for my friends and family. If my apron is not sufficiently covered in flour at some point during the holiday season, I just haven’t worked hard enough.
I love entertaining during the holidays, but if you’ve read my blog before, you know that I also like to spend time with the people I’m actually entertaining. There’s nothing worse than having friends or family over, and then having to spend the entire time working instead of enjoying each other’s company. I’m all about figuring out bits and pieces that can be made ahead, so that my time with my company is well spent.
This is a great make ahead dish for a holiday party. It has all of the warm spices of the holidays, cranberries bursting with tart flavor nestled in with sweet apples, and a hint of orange to bring it all together.
I start by preparing my fruit. I peel and chunk up my apples, zest and juice my orange, and just give my cranberries a good rinse. Then, they were tossed in a large bowl along with some sugar, flour, cinnamon and nutmeg.
Now, we all know what a sticky mess baked fruit can be. That’s why I always make sure that I spray my baking pans ahead of time with PAM Cooking Spray. I’ve used the bargain brands, and there really is a difference. So, before I piled my fruit mixture into my baking dish, I made sure to give the dish a quick spray with PAM. Then, in went the fruit.
Next, it was time to mix up the crumb topping. Into my stand mixer went some flour, sugar, brown sugar, oatmeal, salt, and two sticks (It’s the holidays. Don’t judge.) of chilled butter. I mixed it all together until the mixture was nice and crumbly.
Then, I topped my fruit with most of the topping. I wanted to make sure that the fruit was able to bubble through in some places, so I left about 1/2 cup of the topping in the bowl.
As you can see, it was still packed with topping!
At this point, I covered it with plastic wrap and popped it in the fridge for a few hours, until we were sitting down to dinner with our guests. Then, as we were eating, I baked it up. Like I said, make ahead dishes are the key to my holiday gathering happiness!
It was delicious, perfect for the season with the spiced orange, apples, and cranberries popping under that buttery, oatmeal crisp. We all thoroughly enjoyed it, topped with a heaping scoop of vanilla bean ice cream.

Winner Selection:
The winners of the Sweepstakes will be selected in a random drawing by Blog from among all eligible Entries received throughout the Promotion Period using the selection tool indicated on ChewNibbleNosh.com. The random drawing will be conducted by Sponsor or its designated representatives, whose decisions are final. Odds of winning will vary depending on the number of eligible Entries received. Winner will be notified by email at the email address provided in the Entry Information after the random drawing. Potential winner must accept a prize by email as directed by Sponsor within 48 hours of notification. Any winner notification not responded to or returned as undeliverable may result in prize forfeiture. No substitution or transfer of a prize is permitted except by Sponsor.

CRANBERRY ORANGE APPLE CRISP
Adapted from Ina Garten
- For the Fruit Filling:
- 5 firm Gala Apples
- 3/4 cup fresh cranberries
- 2 tsp. freshly grated orange zest
- freshly squeezed orange juice from 1/2 of that orange
- 3/4 cup sugar
- 1/4 cup flour
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- For the Topping:
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 3/4 cup packed light brown sugar
- 1/2 tsp. salt
- 1 cup old-fashioned oatmeal
- 2 sticks cold butter, diced
- Preheat the oven to 350*F.
- Peel and core the apples and slice into large chunks. Place the apple chunks, cranberries, orange zest, orange juice, sugar, flour, cinnamon and nutmeg in a large bowl, and stir to combine well.
- Spray a 10 inch pie plate (or similar baking dish) with PAM Cooking Spray, and pour the fruit mixture into the dish.
- Mix the topping: Combine the flour, sugars, oatmeal, salt, and cold butter in the bowl of a stand mixer, and mix on low-speed for 1-2 minutes until the mixture is crumbly. Sprinkle the oatmeal mixture over the fruit, covering as much of the fruit as possible.
- *At this point, you could cover the dish with plastic wrap and chill it until you’re ready to bake.
- Place the baking dish on a cookie sheet, and place in the oven. Bake for 50 minutes to 1 hour, or until the top is toasty brown and the fruit is bubbling.
- Serve warm with vanilla ice cream or whipped cream.
