I think it’s here, folks. For real this time. I think we can (finally) safely say that Spring has arrived and won’t take off again. I know it’s a risky statement, given the crazy weather we’ve had, but I feel good about saying that this time. I really do.
A couple of days ago, I met my beautiful sister-in-law, Karin, for lunch at one of my favorite local spots. The restaurant changes their menu monthly based on what’s seasonally available. It’s very much farm-to-table, homegrown, and delicious. Have you ever had one of those nights when dinner just completely sneaks up on you? That was last night for me. I’d had a busy day, and was a little drained. The kids were home from school, homework was done, I had a half an hour until my husband would be on his way home, and we needed to eat on the early side of the evening because Avery had to be somewhere. I’m pretty sure that when people come into my kitchen, they might look in one corner of it and think I have a problem with hoarding. You see, in one corner of my kitchen, there’s a stack of cooking magazines. It’s a pretty large stack, if I’m being completely honest. Magazines I can’t quite bear to part with yet, but that I also haven’t had the time to dig through. Thursday nights have become increasingly busy around here, so I’ve now dubbed them Slow Cooker Thursdays. There’s no way I’m going to be able to cook a dinner in between shuttle stops, so I’m thankful I have a good number of tasty slow cooker meals in my back pocket. This one can now be added to the list.
I honestly can’t remember a time where I’ve cooked whole, bone-in pork chops in the slow cooker, and I was pretty happy with how they turned out. The pork was fall-off-the-bone tender, and had a ton of flavor from a delicious herb-garlic rub. One of the greatest things I’ve learned along my food blogging journey is that there are some spectacular cooks floating out there on the interwebs. I’m thankful that my platform here has connected me with many of these talented folks, and in turn, they inspire me to bring some of their amazing creations into my own kitchen.
My friend, Peter, posted this salmon recipe on his beautiful blog, Feed Your Soul Too, and as soon as I saw it, I knew I needed to try it out. (Thanks, Peter!!) Over the past couple of years, I have easily fallen in love with Za’atar. Za’atar is a flavorful, Middle Eastern spice blend. I don’t know about you, but this week is a pretty busy one for me. So busy, in fact, that I contemplated just letting the ol’ blog go this week and not adding anything into the mix until after Christmas. In this house, the side dishes generally play second fiddle to the entrée. I’m usually spending so much time with the main part of the meal that the side dishes are pretty simple, or sometimes, even an afterthought. Sometimes, a recipe comes along and stops us all in our tracks. This is one of those recipes. I grabbed this recipe from my Skinnytaste cookbook, whipped it up for dinner, and my husband couldn’t stop talking about it. There are a lot of slow-cooker-taco-filling recipes out there, but this one holds a special place in our hearts, and now, our recipe box.
