This is one of my favorite cakes to bake in the summertime. I’m not a huge fan of biscuit based shortcakes, but pairing berries with this deliciously, buttery, moist pound cake is one of the best ways, in my opinion, to sweeten up the summer.

I love this cake. My husband loves this cake. My children love this cake.
I’m guessing a lot of other people do too, and that’s how it got its name. It certainly is yummy, and it’s a pretty impressive dessert for being so simple to put together. It’s a great dessert for a crowd, or pot luck, because you can make it ahead of time and it actually tastes better the longer you let it hang out in the fridge! Ah, Aaron’s birthday. It’s that one day a year, when I can look into my dear, sweet husband’s eyes and say, “You’re officially older than I am again. HA!”
And in turn, eight months from now, he’ll enjoy looking at his dear, sweet wife, and saying, “HA! You’re old like me!”
For Aaron’s birthday this year, I decided to throw the birthday cake idea out the window and make something more his speed. I’m a cake kind of person. I love chocolate, rich, cakey kind of desserts. Aaron? He’d much prefer a pie. Ultimately, he loves a good berry pie, so I knew that he’d probably really enjoy this free form raspberry and rhubarb crostata recipe that I’d been eyeing for a while. It’s time to Spring things up in here! I can’t do winter food any more. I’m done. I don’t care if it’s freezing outside, my toes are endlessly cold, and the wind is gusting so hard it makes my ears hurt. It’s the end of March, for crying out loud!
Spring desserts, in my opinion, call for light, fresh flavors and, above all, berries. I love a good berry dessert, and this is one of them. This year, when I thought of St. Patrick’s Day desserts, visions of chocolate and Irish Cream danced in my head. I quickly hit the Internet, to see if I could find something, and was greeted with an abundance of Irish Cream desserts. Some of them were pretty intense. I chose this one because, well, it just sounded really good. I don’t mind booze in a dessert, but I don’t like “boozy desserts”. Does that make sense? Some things, you never outgrow. There’s just something about peanut butter and jelly that comforts, and takes me back to simpler times. It’s not often that I grab a PB&J for lunch now that I’m all grown up. It usually only happens when it’s “that time again” to run to the grocery store because we’re out of everything else. It’s that time of year again! My friends in Louisiana are rolling out the floats, lining up their ladders and getting ready to celebrate Mardi Gras. Next Tuesday is Mardi Gras Day, but the parades and festivities start long before that. By Tuesday, however, the town will be packed from end to end with visitors from all over the world, who love to call New Orleans home for a few days every year and party like there’s no tomorrow. If the thought of finding cookbooks in four rooms of my house gives you the heebie jeebies and makes you think that calling the producers of “Hoarders” might be the next step, then whatever you do, DON’T think about my collection of cooking magazine back issues.

It’s amazing to think that in just a few short hours, it will be 2013. I JUST got used to writing 2012 on my checks, and now I’m going to have to start all over! This past year certainly did fly by.
I figure I’ll end Chew Nibble Nosh for 2012 on a sweet note, hoping it will inspire a wonderful year ahead for all of us. Also, I figured it might be a good fit since today is, for many people, “The Last Great Pig Out Day of the Holidays Before I Start my Diet”. Oh, the weather outside is…not so frightful. The fire? Not really so delightful. In fact, the weather is terribly un-Christmassy. Does Mother Nature know that it’s December? Does she have any idea that Christmas is just a few short weeks away? I know I probably sound like a big Scrooge to most of you, and those of you who live up north are rolling your eyes at me because you’re enjoying the warm weather you’ve had and think I’m crazy, but I’m having a very hard time getting into the Christmas spirit when I can still break a sweat just walking to my mailbox!
