So, I am not a big Black Friday shopper. I have never been out to the stores to grab a deal early in the morning. I’m usually kitchen-hungover the day after Thanksgiving and enjoy every last-minute of staying cuddled and warm under the duvet when Friday rolls around. The idea of storming my local mall with millions of other shoppers the day after Thanksgiving, and battling other bleary eyed moms for the last Hatchimal is my personal version of hell. I’m pretty sure that when people come into my kitchen, they might look in one corner of it and think I have a problem with hoarding. You see, in one corner of my kitchen, there’s a stack of cooking magazines. It’s a pretty large stack, if I’m being completely honest. Every year after Easter, I run into the same predicament…what to do with all of this leftover ham? This deliciously light and fluffy quiche took care of a bit of it last night. This may be my new go-to quiche base as it baked up so nice and light. My girls, who are admittedly quiche-wary, even gobbled up their slices and openly discussed how much they were enjoying it. Every year at Saint Patrick’s Day, like a lot of you, I make corned beef and cabbage. It’s a dinner we all really enjoy, and despite all of us enjoying it, I find myself only making it once a year. I’m not exactly sure why, but that’s usually how it goes. And my family gets pretty excited when that once-a-year day rolls around! Sunny and 65 one day, snowy the next. We’re in that weird part of the season where Winter just can’t decide if she wants to hang out at the party longer. She’s lingering in the doorway on her way out, coat in hand, but still chatting up the host.

Sometimes, a recipe comes along and stops us all in our tracks. This is one of those recipes. I grabbed this recipe from my Skinnytaste cookbook, whipped it up for dinner, and my husband couldn’t stop talking about it. And the beauty of it is, it’s so simple to throw together for a quick weeknight meal, but definitely impressive enough to serve to guests. The flavors are spectacular, it’s beautiful on the plate, and that maple-sage butter melting over the pork and apples? Holy smokes.
I started by making that very special butter. I combined some softened butter with some chopped, fresh sage, salt, pepper, and a good drizzle of maple syrup.
