Slow Cooker Chana Masala

Here we are.  We made it!  It’s 2017.  We’re right at the start of another new year, and if you’re anything like me, you’re looking back on the last month of food you consumed and are thinking “Wow. That was a lot of cheese.”  Not that there’s anything wrong with cheese, but you know what I mean.  The new year has arrived, and it’s time to step away from the gluttony of the holidays for a bit!

Instant Pot Loaded Potato-Cauliflower Soup

So, I am not a big Black Friday shopper.  I have never been out to the stores to grab a deal early in the morning.  I’m usually kitchen-hungover the day after Thanksgiving and enjoy every last-minute of staying cuddled and warm under the duvet when Friday rolls around. The idea of storming my local mall with millions of other shoppers the day after Thanksgiving, and battling other bleary eyed moms for the last Hatchimal is my personal version of hell.  And for that reason, it just doesn’t happen.

I’m pretty sure that when people come into my kitchen, they might look in one corner of it and think I have a problem with hoarding.  You see, in one corner of my kitchen, there’s a stack of cooking magazines. It’s a pretty large stack, if I’m being completely honest. Magazines I can’t quite bear to part with yet, but that I also haven’t had the time to dig through.  So they sit, in the corner, next to my cookbook cabinet (that hopefully makes my cookbook addiction look less hoarder-esque.)

Lightened Up Ham & Spinach Quiche

What have we got?  We’ve got HAM!

Every year after Easter, I run into the same predicament…what to do with all of this leftover ham?  This deliciously light and fluffy quiche took care of a bit of it last night. This may be my new go-to quiche base as it baked up so nice and light. My girls, who are admittedly quiche-wary, even gobbled up their slices and openly discussed how much they were enjoying it.  What’s up with that?  It seems the copious amounts of chocolate eggs and jelly beans put them in a good mood.

Every year at Saint Patrick’s Day, like a lot of you, I make corned beef and cabbage.  It’s a dinner we all really enjoy, and despite all of us enjoying it, I find myself only making it once a year.  I’m not exactly sure why, but that’s usually how it goes. And my family gets pretty excited when that once-a-year day rolls around! I’ve been making it for years, once a year, and after trying numerous variations on the old stand-by, I’ve decided that this version is my favorite…and the rest of my family agrees.

Skillet Chicken Pot Pie with Butternut Squash

Seriously, Winter.  Make up your mind.

Sunny and 65 one day, snowy the next.  We’re in that weird part of the season where Winter just can’t decide if she wants to hang out at the party longer.  She’s lingering in the doorway on her way out, coat in hand, but still chatting up the host.

Thankfully, there are recipes like this that help bridge the gap.  This chicken pot pie is cozy and warm, but filled with bright fresh spring flavor, with a boost from fresh garlic, kale, pearl onions, butternut squash, and shredded rotisserie chicken.  It’s lighter than a traditional pot pie, but still warms your soul when winter hangs on for dear life.

Cauliflower Gratin with Tomatoes and Feta

In this house, the side dishes generally play second fiddle to the entrée.  I’m usually spending so much time with the main part of the meal that the side dishes are pretty simple, or sometimes, even an afterthought.  THIS side dish, however, takes center stage, and it was absolutely the most exciting thing we had at dinner that night.

Sometimes, a recipe comes along and stops us all in our tracks.  This is one of those recipes.  I grabbed this recipe from my Skinnytaste cookbook, whipped it up for dinner, and my husband couldn’t stop talking about it.  There are a lot of slow-cooker-taco-filling recipes out there, but this one holds a special place in our hearts, and now, our recipe box.  It’s really, really tasty, and when you feel like you need to lighten up, and freshen up, your fall meal routine, this is a great place to start.

Skillet Pork Chops with Apples and Maple-Sage Butter

This, my friends, is a really, really tasty meal.

And the beauty of it is, it’s so simple to throw together for a quick weeknight meal, but definitely impressive enough to serve to guests.  The flavors are spectacular, it’s beautiful on the plate, and that maple-sage butter melting over the pork and apples?  Holy smokes.

I started by making that very special butter.  I combined some softened butter with some chopped, fresh sage, salt, pepper, and a good drizzle of maple syrup.

That’s it. Simple, and fresh.
