Is anyone else out there having a rough time getting into fall this year? Fall is my favorite season, and I’m just not feeling it yet. I’m usually one of those stereotypical Pumpkin Spice loving, boot wearing, sweater snugly people, and I’m just having the toughest time getting in the fall mood. It could be that it’s still pretty warm and the trees haven’t really started changing yet. I don’t know. I just know I’m not feeling it, and my not feeling it is annoying me.

This simple, healthy mash-up of chicken, veggies, and quinoa was the perfect weeknight dinner for us the other night. We all enjoyed it, and it will definitely be thrown into the regular dinner rotation around here. I couldn’t ask for more from a dinner, really. I love gazpacho in the summertime. And every year, I don’t make it nearly often enough. This year, I somehow made it all the way to August before diving in to a big bowl of it, and I’m already kicking myself.
I ran across this recipe online. In fact, it popped up in my Facebook feed, screaming “Make me!”. Never one to argue with a recipe, I figured I better get on it quickly. It’s different from a traditional, chunky gazpacho, but I loved its creaminess and delicious fresh flavor. It’s creamy without a drop of cream, and so refreshing. I will say that the recipe serves four exactly. So, if you’re hankering for leftovers, or a second bowl, and you’re serving your family, you might want to double up on things. Back when my husband and I were first married, I remember buying a cookbook that boasted “Four Ingredient Meals”. I made a few things out of it, and then, somehow, the book disappeared. I either threw it away out of frustration or sold it in a garage sale. I honestly can’t remember. What I do remember is the recipes I made from that cookbook were all so horrible, it was almost comical.

Have you ever had one of those nights when dinner just completely sneaks up on you? That was last night for me. I’d had a busy day, and was a little drained. The kids were home from school, homework was done, I had a half an hour until my husband would be on his way home, and we needed to eat on the early side of the evening because Avery had to be somewhere. Every year after Easter, I run into the same predicament…what to do with all of this leftover ham? This deliciously light and fluffy quiche took care of a bit of it last night. This may be my new go-to quiche base as it baked up so nice and light. My girls, who are admittedly quiche-wary, even gobbled up their slices and openly discussed how much they were enjoying it. Spring is in the air! Well, kind of. I mean, we’ve had a couple of really warm days lately and the trees are getting confused, but I think we’re still supposed to get more snow later this week.
