It seems that a lot of people are having a rough time with the cookies spreading. My guess is that they haven’t used the correct amount of coconut. Make sure that you grab a 14 oz. bag of coconut. So, I am not a big Black Friday shopper. I have never been out to the stores to grab a deal early in the morning. I’m usually kitchen-hungover the day after Thanksgiving and enjoy every last-minute of staying cuddled and warm under the duvet when Friday rolls around. The idea of storming my local mall with millions of other shoppers the day after Thanksgiving, and battling other bleary eyed moms for the last Hatchimal is my personal version of hell. One dinner my kids can always agree on not pouting over is Chicken Parmesan. Who doesn’t love Chicken Parmesan? Breaded chicken, rich tomato sauce, pasta, and cheese? It’s a carb lovers dream. When I saw these little stuffed zucchini boats, though, filled with all of the flavors of our favorite chicken parm but in a slightly-less-calorie-packed frame, I decided to give it a whirl. After all, this time of year, I’m saving all of my calorie splurges for cookies and party food. This simple, healthy mash-up of chicken, veggies, and quinoa was the perfect weeknight dinner for us the other night. We all enjoyed it, and it will definitely be thrown into the regular dinner rotation around here. I couldn’t ask for more from a dinner, really. Back to school, back to crazy, back to my assignment as a personal Uber for my kids. Everything has kicked back into gear here and we are officially back in the swing. During the craziest nights, I rely heavily on my slow cooker. I have a ton of slow cooker recipes on this blog, with good reason. I use it a lot. I remember a time when I rarely used my slow cooker at all, and it sat collecting dust in my pantry. No more! I break it out at least once a week. And you should too! I love gazpacho in the summertime. And every year, I don’t make it nearly often enough. This year, I somehow made it all the way to August before diving in to a big bowl of it, and I’m already kicking myself.
I ran across this recipe online. In fact, it popped up in my Facebook feed, screaming “Make me!”. Never one to argue with a recipe, I figured I better get on it quickly. It’s different from a traditional, chunky gazpacho, but I loved its creaminess and delicious fresh flavor. It’s creamy without a drop of cream, and so refreshing. I will say that the recipe serves four exactly. So, if you’re hankering for leftovers, or a second bowl, and you’re serving your family, you might want to double up on things. Every time I have spaghetti squash, I say to myself, “Self, we need to have spaghetti squash more often.” It’s such a great, healthy vehicle for so many things, and this latest creation, a deliciously cheesy southwestern inspired cozy casserole of sorts, was a dinner highlight last week. After being married for close to nineteen years (next week!) to my husband, I’ve gotten to know him and his tastes pretty well. I have to admit, he’s very polite when it comes to dinner time. He never complains, even if what I’m serving for dinner isn’t exactly what he was in the mood for. It doesn’t matter if we’re having cereal or a four course meal, he’ll eat it with a smile on his face. Although, with the cereal, he probably sneaks back into the pantry after dinner. And he’s very patient as I snap picture after picture of dinner, trying to get the right shot, before serving it up. I know that’s not a common problem in most households, but in our house, it’s a “thing”. He’s a trooper, and always has been, even before I started this blogging gig.
